While simple stir fried aloo methi is very common, but a thick masala based aloo methi curry (gravy) dish with the same combination is not known to many. Well, here we provide you the recipe of this simple, but very flavorful and aromatic curry. This Aloo methi curry goes very well with all types of Indian breads n rice, but tastes best with pooris & kachoris. Did you know, ‘Fenugreek’ is rich in calcium, phosphorus, and a good source of Iron and vitamin C. Steaming is considered the best way of cooking this herb, as all the vitamins are retained. The protein content in dried fenugreek leaves is almost equal to that in pulses. Besides, it also helps in lowering sugar levels in blood and hence good for diabetics.

Recipe Ingredients

  • Potato (Boiled n peeled) – 3 medium
  • Fresh fenugreek – 250 gms. or a medium bunch
  • Onion (Chopped) – 1 large
  • Tomato (Chopped) – 1 medium
  • Ginger garlic paste – 2 tea spoon
  • Turmeric powder – 1 tea spoon
  • Red chilly powder – 1 tea spoon
  • Garam masala powder – 1.5 tea spoon
  • Coriander powder – 1 tea spoon
  • Water – 1.5 cups or as required for gravy
  • Oil – 2 table spoon

Whole spices –

  • Cumin seeds – 1 tea spoon
  • Fenugreek seeds – 1 tea spoon
  • Bay leaf – 2

How to make Aloo Methi Gravy ( Curry )

  • To begin with, we need to wash fenugreek first. Pluck the leaves from the stalks and keep aside.
  • Now, heat oil in a pan or wok. Add whole spices, when they begin to crackle add turmeric powder and chopped onion. Saute till pink.
  • To this add chopped tomato, ginger garlic paste and all the powdered spices.
  • Saute on medium heat while stirring occasionally to avoid burning. If you notice that the masala is sticking at the bottom of pan, then sprinkle some water & continue with cooking.
  • Add potato cubes, fenugreek leaves, water and cook till the water starts boiling. Lower the flame and simmer for 5-7 minutes. Season with salt and remove from heat.

‘Aloo methi gravy’ is ready. Serve with naan, puris or boiled rice. You can also team up with some cucumber raita and mango pickle to make a complete meal.
