‘Patra’ (In Gujarati) or ‘Pathrode’ (In Konkani) is a delicious filling snack made with colocasia (Arvi/taro) leaves. It is robust with flavors…savory, spicy and sweet all at the same time. Serve these patra ‘Steamed’ as a healthier snack option or ‘Shallow fry’ for slight crunch, tastes yummy both ways. It also teams up very well with the regular Indian or Gujarati thali as one of the snack option.

When making ‘Patra’ follow 2 rules…first, make the roll tightly and second, do not miss to add dry mango powder (Amchur) in the filling. This reduces natural bitterness of the leaves.

Recipe Ingredients

  • Fresh colocasia leaves – 8-10
  • Refined oil – To shallow fry (Optional)

For the ‘Batter’ –

  • Gramflour (Besan) – 1 cup
  • Ginger garlic paste – 2 teaspoon
  • Carom seeds – 1 teaspoon
  • Turmeric powder – 1 teaspoon
  • Red chilly powder – 1 ½ teaspoon
  • Dry mango powder (Amchur) – 2 teaspoon
  • Sugar – 1 teaspoon
  • Garam masala powder – 2 teaspoon
  • Salt – To taste
  • Water – As required to make batter

How to make Patra

  • To begin with making ‘Patra’ we need to prepare a batter to make colocasia leaf rolls.
  • For the batter, in a mixing bowl combine all the ingredients listed under second category and whisk a batter with sufficient water. Take care not to form any lumps. The consistency of this batter must be thick.
  • Now when the batter is ready, we can proceed to make the rolls.
  • For making rolls wash colocasia leaves and pat dry with a kitchen towel.
  • Place one leaf on a plate or board (Vein side facing up) and cut the vein with a sharp knife.
  • Take a spoonful of batter and apply all over the upper side of leaf.
  • Place another leaf on top of it and spread the batter.
  • This way you can stack 4-5 leaves together spreading batter on each. Carefully start folding this stack from one side. Apply little batter to seal the end.
  • The rolls are ready. Prepare a steamer by boiling around 2 cups of water. Place the rolls on the steamer plate and close with a lid. Steam cook for 8-10 minutes or till the rolls are cooked to perfection. Remove from heat.
  • Cut these steamed rolls into pieces. You can serve them hot with chutney of choice and it is also a healthier way of snacking. But, if you want to make it slight crisp then heat sufficient oil in a pan and shallow fry the steamed patra pieces till golden from both sides.

Crisp golden ‘Patra’ is ready. Serve hot with tea along with red raw mango garlic chutney and ginger and black pepper pickle.
