This cherry tomato & baby spinach salad is a greener version of caprese salad usually made with mozzarella cheese, tomatoes , fresh basil as is quite refreshing and flavorsome due to the added nutrients of spinach.  A generous drizzle of olive oil and vinegar makes the spinach bed tender, juicy and wonderfully compliments the crunch of these garden fresh veggies.

So, get out the tomatoes, baby spinach and let’s get started!

Recipe Ingredients

  • Cherry tomatoes – 200 gms.
  • Baby spinach leaves – 100 gms. or a small bunch

For the dressing –

  • Vinegar (Any variety) – 2 tablespoon
  • Olive oil – 2 tablespoon
  • Salt – To taste
  • Black pepper powder – 1 teaspoon

How to make Cherry Tomato & Baby Spinach Salad

  • You can toss this healthy salad in a jiffy. So, to begin with making it we need to cut the cherry tomatoes into half. Keep aside in a bowl. If you don’t get cherry tomatoes, use the regular ones that you get and cut into quarters.
  • Wash the baby spinach leaves thoroughly in a strainer to remove all the impurities. Pat dry with a kitchen towel and keep aside in another bowl.
  • Now when our veggies are ready, we need to quickly make the dressing for our salad.
  • For this combine all the ingredients for dressing in a bowl and give a nice mix.
  • Divide this dressing in 2 equal portions.
  • Drizzle one portion of this dressing over the spinach and other portion over tomatoes.  Toss both the bowls.

Assembling the salad –

  • In a salad plate or bowl make a bed with spinach.
  • Then layer it with juicy tomatoes.
  • Finish your salad while pouring the remaining dressing from the bowls.

Serve immediately!
