‘Soya Saag Aloo’ or potatoes with dill greens is an aromatic stir fry with pungent flavors and pairs beautifully with tawa paranthas, theplas, puris and rice. Cooking this soya saag aloo is not too tricky and not too easy either as washing and cleaning of sua leaves is a bit tedious job, but once you make and taste this stir fry….you would feel that all that hard work was truly worth. The aroma of garlic, ginger and fresh seasonal dill leaves is mesmerizing and once you have the clean chopped dill greens, remaining recipe is a breeze.

 

Did you know, ‘Dill Greens’ belong to the celery family and have a lingering taste and aroma. Hence the leaves are usually used to flavor soups, salads, dips and even used in pulao making like the Persian Shivid Polow ! The seeds are used to extract oil and also to spice up the dishes.

Besides, dill has a number of benefits and incorporating it into a regular diet is essential to keep healthy. It helps fight various diseases such as cold, arthritis, dysentery and diarrhea. Especially for females, dill is a great natural source of regulating menstrual cycles.



*Plan your lunch menu with aloo sua subzi, navratan dal or beans moong dal poriyal with plain paranthas or Punjabi masala paranthas. Team with mooli ki chutney or instant amla pickle (Gooseberry pickle) for that healthy doze of vitamins.

*Pair aloo sua subzi in lunch box with Gujarati sweet kadhi or chana dal lauki. Pack dhaniya raita along for soothing spoonfuls in between the meal.

*Enjoy a light meal with aloo sua subzi, cumin rice and masala boondi raita.

Recipe Ingredients

  • Potatoes – 3 large
  • Dill greens (Soya greens/sua saag) – A small bunch
  • Garlic (Finely chopped) – 1 teaspoon
  • Ginger (Chopped) – 1 teaspoon
  • Garam masala powder – 2 teaspoon
  • Red chilly powder – 1 teaspoon
  • Dry mango powder (Amchur) – 1 teaspoon
  • Cumin seeds – 1 teaspoon
  • Salt – To taste
  • Oil – 1 tablespoon

How to make Soya Saag Aloo

  • To begin with making this delicious sua aloo subzi, we need to wash and chop dill greens first. 

Washing & chopping sua/dill greens –

  • ~Soak the sua bunch in water and rinse well twice to remove away the dirt.
  • ~Pat with a kitchen towel.
  • ~Remove those thick stalks from the bottom.
  • ~Now make small bunches of fine stalks, place over chopping board and chop.
  • ~Finely chopped sua greens is ready. Keep aside.
  •  
  • Peel potatoes and cut into 1 inch cubes. Keep aside.
  • Now heat oil in a pan and add the cumin seeds.
  • When they crackle add ginger, garlic and sauté till pink.
  •  Add in potato cubes and quickly stir. Sprinkle some water and immediately cover the lid. Cook on low to medium flame for 10 minutes or till potatoes are at least half way done.
  • Open the lid and add the chopped sua greens. Give a quick stir and again sprinkle some water, cover with lid and cook on low flame for 10 minutes more or till the potatoes are completely cooked.
  • Now mix in salt and all the powdered spices.
  • Remove from heat.
  • Dill greens potato is now ready. You can serve with paranthas, phulkas or make a ravishing platter as per our serving suggestion.
