A classic Punjabi combo of Makke Ki Roti and Sarsaon Ka Saag served with some onion, radish & jaggery makes one of the best wholesome meals in winters. Makke Ki roti is a delicious pan fried bread made with Makki ka aata or maize flour and is flavored with ginger, green chilly and other spices.

It has a very rustic feel and usually served with dollops of homemade white butter, but if you’re counting on calories then you can simply skip it. Though, we would emphasize that butter smeared makke ki roti gives the authentic Punjabi taste.

Making make ki roti for the first time can be slight tricky as it requires little bit of skill to make its dough and roll out fine round rotis. But with some practice and patience you can master it too….and why not, it is not some rocket science.



Makke ki roti and sarsoan ka saag is a match made in heaven. But this pure rustic bread also tastes great with palak tamatar ki subzi and dal makhni. Team with dhaniye ka raita and bel ka sharbat for a wholesome meal.

Recipe Ingredients

  • Cornmeal (Makki Ka Atta) – 2 cups + extra for dusting
  • Whole wheat flour – 1/2 cup
  • Turmeric powder – 1/2 tsp
  • Fresh coriander (Finely chopped) – A handful
  • Green chilly (Finely chopped) – 1 tsp
  • Ginger (Grated) – 1 tsp
  • Carom seeds – 1 tsp
  • Salt – 1 tsp (Optional)
  • Warm water – As required for making dough
  • Ghee/vegetable oil – For cooking

For Serving –

  • Butter (Optional)

How to make Makke Ki Roti

  • In a large bowl combine all the dry ingredients and knead to a stiff dough with warm water.
  • Cover it with a wet muslin cloth and keep to rest for 20 minutes to half an hour.
  • Remove the cloth and knead the dough once again to make it as smooth as possible.
  • Now, our dough for making the rotis is ready. Divide it into lemon size balls. Also take some cornmeal in a plate for dusting.
  • Take one ball, flatten it slightly with your palm, dust in corn meal and roll into a circle of about 3 inches in diameter.
  • Place this roti on a pre-heated pan. Cook it on medium heat flipping occasionally till you see brown spots appear on the sides.
  • Smear some ghee/oil on both the sides and cook until it becomes slight crisp.
  • Our ‘Makke Ki Roti’ is now ready. Place a dollop of butter on it and serve with ‘Sarsaon Ka Saag’ for that mouth watering combo. For a lip smacking meal, do refer our serving suggestion above.
