Fresh seasonal juicy red carrots simmered with milk solids (Khoya or Mawa), ghee and sugar tastes delightful on a chilly winter evening. It also makes an important part of the regular winter Thali in Punjab and North India. Many people make this halwa with just milk and sugar, whereas some often use Milk Powder to get that creaminess. But the one you make with Khoya or Mawa tastes the ultimate and the most exotic one. This is also a sure shot dish in every festive or party menu during winters.

Gajar ka halwa is also known as Gajrela or Carrot halwa is a carrot based sweet dessert. Gajar ka Halwa is made by placing grated carrots in a pot containing a specific amount of water, milk and sugar and then cooking while stirring regularly.

Recipe Ingredients

  • Carrot ( Gajar )  - 1 kg.
  • Khoya/Mawa (Milk solids) - 150 gms.
  • Ghee - 2 tablespoon
  • Cardamom powder - 1 teaspoon
  • Dry fruits of choice - 1/2 cup

How to make Gajar Ka Halwa Or Gajrela

To begin with making this super delicious and rich Gajar Ka Halwa Or Gajrela you need to wash carrots throughly in water to remove dirt.

  1. Peel these carrots and grate them. If you have a Food Processor, then it would make your task a lot easier.
  2. Now when we have grated carrots ready,we can proceed to cooking this halwa.
  3. Take a large pan or wok and put on the gas burner. Melt in ghee and fry all dry fruits till they get slight pink in color and gain little bit of crunch.
  4. Transfer them on a plate and in the same ghee put in grated carrots.
  5. Stir and spread the carrots in pan. Simmer on medium heat till the water content is evaporated, but do not forget to keep stirring after every 5 minutes to avoid burning.
  6. This would easily take 20 -25 minutes for the moisture to get dry. Now add in sugar, khoya, cardamom powder and mix well.
  7. Again simmer on low heat till the sugar is melted and everthing is combined well. This would take 10 -15 minutes.
  8. At last, add in fried dry fruits and remove from heat.
  9. Gajar Ka Halwa is now ready. Serve hot and you can store the remaining in your refrigerator for 10 days.

Note -

*Red juicy and tender carrots are best for Halwa.

*Always take a large wok that can give enough room while you are stirring the contents.

*Also take a Heavy Bottom wok.

*For richer taste, add more Ghee and Khoya.
