Recipe Ingredients

  • Raw Mangoes (Kairi/Kacche aam) - 2-3
  • Jaggery (Cane sugar) - 3/4 cup or equal amount of sugar
  • Water - 1/2 cup
  • Black salt - 1/2 teaspoon or to taste
  • Red chilly powder - 1 teaspoon
  • Ginger powder (Sonth powder) - 1 teaspoon
  • Ghee/oil - 1/2 tablespoon 

Whole spices -

  • Fennel seeds (Sauf) - 1 teaspoon
  • Onion seeds (Kalaunji) - 1/2 teaspoon
  • Fenugreek seeds (Methidana) - 1/2 teaspoon
  • Bay leaf (Tej patta) - 2
  • Dry red chilli (Sookhi lal mirch) - 2-3 whole

How to make Mango Chutney

  1. To begin with making ‘Aam ki Launji’ or ‘Mango Chutney’ we need to peel the mangoes and cut in bite size pieces. Do not discard the seed, it goes great in this.
  2. Now heat oil or ghee in a pan and roast all the whole spices on low flame for a minute ot till they give out a nice aroma.
  3. Add in the mango pieces, seed and saute on medium flame for 2 minutes
  4. Time to add in water, jaggery, black salt, red chilly powder, ginger powder and give a nice stir.
  5. Let it come to a boil on high flame and see that the jaggery melts completely.
  6. Reduce the flame after a boil and simmer for 5-7 minutes. Do remember the conbsistency that you see now is going to thicken after this chutney cools at room temperature.
  7. Remove from heat. Mango Chutney is now ready. Let it come to room temperature and then store in a clean and sanitized bottle for better shelf life.
  8. Store in refrigeratotr, would stay good for more than 2 months.
  9. Note -
  10. I used ‘Jaggery’ or cane sugar that’s why this chutney has a deep amber color. You can also use equal amount of ‘Sugar’.
