Amarnath Leaves Paratha or Chaulai Paratha is a healthy twist to your meals. Pair in Main course with dal or subzi of choice or serve with pickle & curd in Breakfast, you are going to fall in love with the flavor and texture. Chaulai Paratha paratha gives you a substantial doze of fiber and nutrition in your daily diet.

Wheat flour mixed with fresh chaulai leaves and interestingly flavored with cumin seeds, green chilli, ginger and other spices makes for a wonderful bread that you would even love to pack in Lunch box or carry along in your Travels.

While we do use greens to make assorted parathas like Palak Paratha, Pudina Paratha, Dhaniya Masala Paratha and Gujarati style Palak Thepla, Methi Thepla…. these Chaulai Parathas are equally delicious and pair wonderfully with meals.

I get messages where people often ask about how to use Amarnath/Chaulai in their regular diet. So besides making Tikkis, Dal and Kadhi I am uploading here this recipe of these easy parathas that you can pair with any curry or stir fried vegetable. Fresh Chaulai Leaves come from my kitchen garden and I often use them in tossing quick Salads.

Amarnath or Chaulai paratha is versatile and can be served with any curry, dal or kadhi. Try pairing it with Aloo Kadhi or Dhaba style Dal Fry along with Jeera Aloo or Tondli Chi Bhaji for a simple homely meal.

In Breakfast team it with pickle or curd and enjoy with Masala Chai.

Recipe Ingredients

  • Amarnath/Chaulai leaves (Finely chopped) - 2 cups tightly packed
  • Wheat flour - 2 cups + extra for dusting
  • Cumin seeds (Jeera) - 1 teaspoon
  • Ginger (Grated) - 1 teaspoon
  • Green chilli (Finely chopped) - 1 teaspoon or optional
  • Red chilli powder - 1/2 teaspoon
  • Dry mango powder (Amchur) - 1/2 teaspoon
  • Curd - 2 tablespoon
  • Salt - To taste
  • Water - As required to knead dough
  • Oil/ghee - For cooking

How to make Amarnath Leaves Paratha | Chaulai Paratha

To begin with making these healthy and lip smacking Chaulai Parathas we need to make the dough first.

  1. Take all ingredients (Except oil, water and curd) in a mixing bowl. Mix to combine the ingredients well and later add curd and knead the dough with water.
  2. Do not knead this dough very soft as the greens would release moisture and make it soggy afterwards.
  3.  So make a stiff dough and keep to rest for 10 minutes. After resting knead it once again to bring in the smoothness and divide into equal size balls.
  4. Take one ball, flatten slightly, dust in flour and roll into a circle of about 4 centimeteres in diameter. Note that these parathas would be rolled slight thicker than the regular plain or tawa parathas.
  5. Put this rolled prantha on a hot griddle and cook on both sides while smearing with oil or ghee till it is cooked well and becomes slight crisp.
  6. Amarnath or Chaulai Parathas are now ready. Serve hot and you might want to refer our Serving Suggestion for better serving ideas.
