Definitely, they do break with the monotony of plain phulkas and paranthas being served regularly. Recipe Ingredients

  • Whole wheat flour – 3 cups + Extra for dusting
  • Water – For making dough
  • Oil – As required

To be ground -

  • Freshly chopped coriander – 1/2 cup
  • Green chilly (Chopped) – 1 teaspoon
  • Ginger (Chopped) – 2 teaspoon
  • Onion (Chopped) – 1 small
  • Salt – 1 teaspoon or to taste
  • Water – For making dough
  • Oil – As required

Powdered Spices -

  • Turmeric powder – 1 teaspoon
  • Red chilly powder – 1/2 teaspoon
  • Dry mango powder (Amchur) – 1 teaspoon

Whole Spices -

  • Cumin seeds – 2 teaspoon
  • Carom seeds (Ajwain) – 1 teaspoon
  • Onion seeds (Nigella seeds/kalonji) – 1 teaspoon

How to make Dhaniya Masala Parantha

  • To begin with making these healthy spiced coriander paranthas, we need to grind all the ingredients under ‘To be ground’ category to make a smooth or slightly coarse paste.
  • Now combine all the ingredients in a large mixing bowl along with the ground coriander paste. Add some water as required and knead to a soft pliable dough.
  • Cover this dough with a wet muslin cloth and keep to rest for about 10 minutes.
  • After resting the dough, knead it once again to make it soft and smooth.
  • Now divide this dough into equal size balls. Since these coriander paranthas are rolled slightly ‘Thick’, so you can make around 10-12 balls from the given proportions.
  • Heat a pan. Meanwhile, take a ball and dust into flour. Roll into a circle or disc and carefully place on the heated pan. Cook on medium flame.
  • After a while you will notice a color change. At this point grease it with ghee or oil and flip. Grease it on other side as well and cook till it gets brown spots on either sides.
  • Transfer the parantha to a serving plate and continue the process with the remaining dough.

Hara dhaniya masala parantha or spiced coriander paranthas are ready. Serve as suggested above.
