Boondi Raita is one of the staple dish or raita in Indian cuisine and is made with Boondi and Dahi ( yogurt ) . Boondi are basically tiny fried balls made with gramflour (Besan) and are easily available in most of the grocery stores. Boondi when combined with fresh yogurt, coriander and assorted spices tastes very refreshing.

It is soothing to the palate and hence, goes excellent with spicy biryanis and curries. You can play with ingredients and add little bit of minced garlic, ginger or green chilly for a twist. This raita can be served with any regular Indian meal or ‘Thali’ as a side dish, but it goes best with dal chawal, khichidi and biryani.



Relish this creamy boondi raita with Bengali bhog khichuri, methi moong dal khichidi or mint rice. Pair with dal makhni or kali masoor dal along with jeera rice for a wholesome comforting meal.

Recipe Ingredients

  • Boondi – 1 cup
  • Fresh yogurt – 1 ½ cup
  • Milk - 1 cup
  • Black salt – 1/2 tsp
  • White salt – To taste
  • Red chilly powder – 1/4 tsp (Optional)
  • Water – 2 cups

Roasted Cumin Seed Powder -

Cumin seeds - 1-2 teaspoon

For garnish -

  • Freshly chopped mint/coriander leaves
  • Black salt
  • Roasted cumin powder
  • Red chilli powder

How to make Boondi Raita

To begin with making Boondi Raita, let us start with making Roasted Cumin Seed Powder that gives a mesmerizing flavor to this raita.

Making Roasted Cumin Seed Powder -

1.Heat a pan and roast cumin seeds on low to medium flame till they get a nice brown colour. Keep stirring to avoid burning of cumin seeds.

2.Now coarsly grind these roasted cumin seeds in a mortar pestle or you can also do it with your mixer grinder.

3.Roasted cumin seed powder is ready and now we can proceed to making Boondi Raita.

 

Making Boondi Raita -

  • Heat water in a bowl. When it is just about to boil, turn off the gas. Add boondi and cover with a lid for 2-3 minutes.
  • Open the lid….you will see that the boondi has swelled up and turned soft.
  • Now carefully, transfer this boondi to a sieve so that all the excess water is removed.
  • Meanwhile, whisk the yogurt and milk till smooth and creamy. Add salt and all the spices.
  • To this add boondi and give a gentle stir taking care that you do not mash them.
  • Taste….you might want to adjust salt or spices.

Boondi Raita is ready. Transfer to a serving bowl and garnish with freshly chopped mint/coriander leaves.

Tips –

  • If yogurt is ‘Too thick’ then add some water while whisking.
  • Try adding some roasted kasuri methi to this boondi raita and see the difference.



Step by Step Photos and Recipe of Boondi Raita

Step 1 -

Take 1-2 teaspoon of cumin seeds in a pan.

Step 2 -

Roast on low to medium flame till brown. Remove in a bowl.

Step 3 -

Coarsly grind these roasted cumin seeds in a mortel pestel or you can do this in your mixer grinder too.

Step 4 -

Now cook boondi in hot water for a minute just to turn them soft.

Step 5 -

Remove excess water and keep boondi aside.

Step 6 -

Take 1 cup of fresh curd in a mixing bowl.

Step 7 -

Add in 1 cup of milk.

Step 8 -

Add in 1 teaspoon of black salt and roasted cumin seed powder.

Step 9 -

Mix well with a whisk or an electric hand blender.

Step 10 -

To this add in cooked boondi and mix.

Step 11 -

Transfer this Boondi Raita in a serving bowl. Top with little amount of black salt, roasted cumin powder, freshly chopped coriander and some crunchy boondi.

Step 12 -

Serve and enjoy with your meals !!!
