These ‘Spanish Egg White Quesedillas’ with golden & crispy texture are low in calories and can be made within minutes for a quick fix healthy breakfast. The recipe involves few super simple steps that can be followed by perfection even by beginners in cooking. We have used whole wheat rotis and plain paranthas, that are routine breads in Indian kitchens. You can even try your hands on ‘Tortilla wraps’ that are easily available in the market. These Spanish style egg white quesadillas go great with tomato ketchup and can also be packed in lunch boxes for a healthy low calorie lunch.

Did you know, ‘Eggs’ are rich in protein and more than half of the protein of an egg is found in egg whites along with vitamin B2 and lower amounts of fats and cholesterol than the yolk. The whites are significantly rich in selenium, vitamin D, B6, B12 and minerals such as zinc, copper and iron.

Recipe Ingredients

  • Eggs – 4
  • Roti/plain parantha/tortilla wrap – 2
  • Black pepper powder – A pinch or two
  • Cumin powder – 1/4 teaspoon
  • Red chilly flkes – A pinch or two
  • Freshly chopped coriander – A handful
  • Salt – To taste
  • Oil (Preferably ‘Olive oil’) – Less than 1 tablespoon

How to make Spanish Egg White Quesadilla

  • To begin with making this Spanish style healthy breakfast, we need to break eggs and carefully separate the whites from the yolk.
  • Transfer the egg whites to a mixing  bowl. Add in the powdered spices, salt and chilly flakes. Whisk till all the ingredients are combined well. You can also use an electronic hand mixer for this.
  • Now heat a medium size non stick pan and drizzle just few drops of olive oil. Pour over half of the quantity of egg mixture and spread over the pan.
  • Top it with freshly chopped coriander leaves and gently place a roti or tortilla.
  • Cook for half a minute and flip to cook on the other side till golden and crisp.
  • Fold with a ladle to a semi circle and transfer to a dish.
  • Repeat this process with the remaining ingredients.

‘Spanish Egg White Quesadilla’ is ready. With the help of a knife or pizza cutter, cut into quarter and serve with tomato ketchup or as suggested above.
