Instant Rawa Uttapam

Recipe Ingredients

  • Rava/sooji/semolina – 3/4 cup
  • Yogurt – 1/2 cup
  • Cumin seeds – 1/2 tea spoon
  • Green chilly – 1 chopped (Optional)
  • Salt – To taste
  • Water – As required to make batter
  • Oil – For cooking

For topping –

  • Assorted vegetables of choice (Onion, capsicum, tomato, mushrooms etc.)

How to make Instant Rawa Uttapam

  • To begin with, in a bowl combine all the ingredients listed in first category (Except oil) and make a batter with water.
  • To this add cumin seeds and salt. Give a nice mix to the batter, cover with a lid/plate and keep to rest for 10 minutes.
  • After resting, check the consistency. If you think the batter is too thick then add more water and if it’s too runny then add some more rava.
  • Now, our uttappam batter is ready. Heat a non stick pan and drizzle few drops of oil. Take a ladle full of batter, pour on the pan and spread evenly like you do for cheela or pancakes, but note that uttapams are made slightly thick.
  • Spread finely chopped vegetables of choice on the top side and gently press with a spatula. Let it cook on medium flame for 2 minutes. Also do check, the edges must be getting brown or golden by now.
  • Drizzle few drops of oil on the upper portion and flip with a spatula. Cook on this side as well till golden and slight crisp.
  • Remove from heat and transfer to a serving plate.

Instant rava uttappams are ready. Serve with coconut chutney and sambhar for that mouth watering combo.

Tips –

  • The consistency of batter for rava uttappam is thicker than dosa batter.
  • You can substitute ‘Yogurt’ with double amount of ‘Buttermilk’.
  • Add some crushed curry leaves to uttapam batter. This enhances the flavors.
