Phirni is a traditional Indian dessert made with full cream milk, rice flour, cardamom and dry fruits. Mango Phirni is a lovely seasonal twist to this amazing dessert that is easy to make and tastes delightful due to its fruity sweet n sour flavors. It is one such dessert recipe that is perfectly fit for any party menu during summers. However, you can also make this rest of the year with preserved mango puree, but the one made with fresh juicy mangoes tastes ultimate.

Though Phirni is a popular dessert in North India, but many people confuse it with ‘Kheer’ or ‘Payasam’. So, keeping into fact that the basic ingredients of both Kheer and Phirni are same, but there is still a difference. In ‘Kheer’ rice is used either whole or in coarsely ground form, whereas in a ‘Phirni’ RICE POWDER or FLOUR is used giving it a smooth and silky texture, more or less like a Custard!

Traditionally, Phirni is served in Clay Pots, also known as Mitti ke ‘Sakore’, though you can also serve in ‘Kullhads’. Check out our pics above where we have presented Mango phirni both ways.

So to serve Phirni that way, after cooking transfer the phirni in clay pots and put in refrigerator to cool. Tastes best when served Chilled, but before serving, top it with chopped dry fruits and mango chunks. You can also garnish it with Rose petals (My personal favorite) that adds a charming color contrast.

Well, I am addicted to ‘Mangoes’ and they go in every possible dish when I have a batch of seasonal mangoes at home. Also tried making Mango Bhel Puri with raw ones and it turned out great! Check out more similar recipes -

Recipe Ingredients

  • Milk (Preferably full cream) - 1/2 litre
  • Rice flour - 1 tablespoon
  • Cardamom powder (Elaichi powder) - 1/2 teaspoon
  • Mango pulp yellow - 1 cup
  • Sugar - To taste
  • Dry fruits (Chopped) - 2 tablespoon + For garnish

How to make Mango Phirni

To begin with making this delicious and creamy Mango Phirni, we need to boil the milk first.

  1. Take milk in a wok or saucepan and bring it to a boil.
  2. Mix rice flour in some milk and make a thin paste. Add this paste to the boiling milk and reduce the flame.
  3. Keep stirring to avoid any lumps. You would notice that slowly milk would start thickening. Now add in the sugar, cardamom powder and continue simmering on low flame.
  4. Meanwhile puree the mango pulp in a mixer. No need to make a smooth puree, if few chunks of mangoes are left, let it be as it tastes good in phirni.
  5. Add this mango puree to the simmering phirni and give a nice mix. Check sweetness, if required add more sugar.
  6. Switch off the flame. Mango phirni is ready, but tastes best when served Chilled.

Notes -

  1. Be careful while adding ‘Sugar’ as this dessert has a natural sweetness of fresh juicy mangoes.  
  2. Well, if you do not like your desserts ‘Too Sweet’, then you can skip adding sugar. The sweetness of mangoes might be sufficient for your palate. So, taste while cooking and take your call. 
  3. If you don’t have ‘Rice Flour’, then soak 1/2 to 1 tablespoon of raw rice in water for 2 hours and grind to make a smooth paste. Add little more water or milk to this paste to make it ‘Thin’ and then proceed with the recipe. This way there would be less chances for forming ‘Lumps’ while cooking.
