‘Kairi Ki Subzi’ is a very popular Rajasthani curry made with ‘Green/Raw Mangoes’. A perfect use of fresh seasonal raw mangoes…..this curry has loads of flavors.  Kairi chunks are simmered in an array of whole spices and jaggery is added to adjust the sourness of mangoes and heat of red chillies. Goes best with phulkas and steamed rice. You can also accompany it with the regular lentil rice or khichidi.

Recipe Ingredients

  • Raw Mangoes – 250 gms.
  • Cumin Seeds – 1 tsp
  • Fenugreek Seeds – 1/2 tsp
  • Fennel Seeds – 1/2 tsp
  • Onion Seeds – 1/4 tsp
  • Asafetida – 1/4 tsp
  • Cloves – 4-5
  • Bay Leaf – 2
  • Turmeric Powder – 1/2 tsp
  • Dry Red Chilly – 2
  • Red Chilly Powder – 1 tsp
  • Jaggery (Grated) – 4-5 tsp or to taste
  • Water – 2-3 cups
  • Salt – To taste
  • Oil – 3 tsp

How to make Rajasthani Kairi Ki Subzi

  • Peel the green mangoes, remove seed and cut into 1 inch cubes . Keep aside.
  • In a pan heat oil and add cumin seeds.
  • When they begin to crackle add dry red chilly, fennel seeds, bay leaf , fenugreek seeds, onion seeds, cloves and sauté for few seconds.
  • Add turmeric pd., red chilly pd. and raw mango pieces. Saute for a minute.
  • Now add water, jaggery, salt and let it come to a boil.
  • Reduce the flame and simmer for 2-3 minutes or till the mangoes have become tender and jaggery has melt down completely. Remove from heat.
