Here we give you the recipe to make delicious uttapams/pancakes where this humble and often underrated vegetable comes out as the hero of dish. Thanks to the ease and simplicity of this recipe, these ‘Cucumber Uttapams’ mildly seasoned with spices are sure to become one of your favorite option for healthy breakfast or a quick fix snack and can be paired with any chutney, curry or stew. You can also pack these delightful savory pancakes in tiffins with any dry masala vegetable or poriyal.

These cucumber uttapams taste great when paired with dahi ki chutney, Andhra podi and ghee.

Recipe Ingredients

  • Cucumber – 1 medium
  • Rice flour – 3/4 cup
  • Semolina (Rawa/sooji) – 2-3 tablespoon
  • Yogurt – 1/4 cup
  • Cumin seeds – 1 tea spoon
  • Red chilly powder – 1/4 tea spoon or to taste
  • Fresh coriander (Chopped) – A handful
  • Salt – To taste
  • Water – As required to make batter
  • Oil – For cooking

How to make Cucumber Uttapam

  • To begin with making our cucumber uttapams/pancakes, grate cucumber or cut in fine pieces (No need to peel).
  • In a large bowl, combine cucumber and all the ingredients except ‘Oil’ and make a batter with water. Keep aside to rest for 10-15 minutes.
  • After resting the batter, check consistency. You might need to add some water. Our uttapam batter is now ready.
  • Now heat a pan (Preferably non stick) and drizzle few drops of oil. Take a ladle full of batter, pour on the pan and spread evenly like you do for dosa/pancakes.
  • When it gets a nice golden color at bottom, then apply some oil on the upper side and flip. Cook till golden and slightly crispy.
  • Transfer to a serving plate and repeat the process with rest of the batter.

Enjoy with your favorite chutneys or pickles!

Tip -

While making batter for these cucumber uttappams, be careful about the quantity of water you’re adding. Cucumbers have a good content of water and hence, much water won’t be needed for batter.
