Gujarati kadhi is a yogurt based preparation thickened with gramflour and a popular main course dish from Gujarat. It has a wonderful medley of sweet and spicy flavors due to jaggery and assortment of whole and powdered spices, but unlike the Punjabi Kadhi Pakoda it is very light on palate and goes very well with rice and all types of khichidi.

If you have ever relished a Gujarati thali, then you must have loved this kadhi. Since it has a burst of sweet flavors along with spicy notes, hence having spoonfuls of it in between the meals is very satisfying. The best part, this is one of the easiest and quickest recipe of kadhi as you don’t need to make any pakodis or fritters to dip in. Hence, this Gujarati kadhi gets ready in about 20 minutes or so and also no onion garlic is added to it. So, people who don’t like the pungent flavors of onion & garlic can savor this delectable kadhi.

Recipe Ingredients

  • Curd (Preferably sour) – 1 cup
  • Gramflour (Besan) – 2-3 tablespoon
  • Jaggery (Powdered) – 1 tablespoon
  • Green chilly – 2 (Slit lengthwise)
  • Salt – To taste
  • Water – 3 cups (Adjustable)
  • Ghee – 1 tablespoon

Whole Spices -

  • Fenugreek seeds (Methi) – 1 teaspoon
  • Cloves – 5-7
  • Cinnamon (Dalchini) – 1 inch stick

For Tempering –

  • Ghee or refined oil – 2 tablespoon
  • Curry leaves (Kari patta) – 10-12
  • Mustard seeds – 1 teaspoon
  • Cumin seeds – 1 teaspoon
  • Asafetida (Hing) – ¼ teaspoon

To garnish –

  • Freshly chopped coriander (Dhaniya)

How to make Gujarati Kadhi

  • To begin with making this sweet and spicy Gujarati kadhi we need to combine curd, gramflour, salt in a large mixing bowl.
  • Add water little by little and keep on whisking till you get a lump free batter. Add remaining amount of batter and make it to thin consistency. Our kadhi batter is now ready.
  • Now heat a large heavy bottom skillet or wok and heat 1 tablespoon of ghee.
  • Add in the whole spices, green chilly and sauté on medium flame till the spices crackle and give aroma.
  • At this stage, carefully transfer the kadhi mixture to the wok. Add jaggery and cook on low to medium flame while stirring occasionally.
  • When this kadhi froths and comes to a boil, then lower the heat and simmer for another 5-7 minutes.
  • Check salt, you might want to adjust. Remove kadhi from heat.
  • Now gujarati kadhi is ready, but no kadhi is complete and tasteful without ‘Tempering’ or tadka.
  • For this heat ghee in a small pan and add all the ingredients for tempering.
  • Switch off the flame and immediately pour this tempering over kadhi.
  • Garnish with freshly chopped coriander or dhaniya patti.

Tip –

Never cook kadhi on high flame, otherwise it would curdle. Always cook low to medium heat.
