Multigrain Gobhi Thalipeeth is my healthy and seasonal twist to the versatile and ever popular Thalipeeth recipe from Maharashtra.

Traditionally Thalipeeth is made with a combination of 3-4 assorted flours like Whole wheat, Ragi, Bengal gram or Besan and Millet. Hence it has a very rustic texture, flavor and full of nutrition due to the amazing combination of so many super rich flours. Here I give you my recipe that I usually like making during winters for my family with the addition of seasonal cauliflower or phool gobhi, ginger, green chilli and little bit of soya saag (Dill) also.

Now making this combination is also easy for me as I get these seasonal greens and cauliflower fresh from my home kitchen garden which I grow organically without using any pesticides or chemicals. You can serve this Multigrain Gobhi Thalipeeth with curd and pickle in Breakfast or team with Dal and Curries in the Main Course Meals. Also do not miss to smear them with Homemade Ghee. This not only makes them tastier, but healthier as well.

A Note -

Traditionally the dough of Thalipeeth is patted directly over the hot griddle/tawa with wet hands, but to keep things easier we are bringing you a simpler version of simply rolloing the dough on board with rolling pin and then cooking on griddle just like any other Roti or Paratha.

Recipe Ingredients

  • Whole wheat flour (Guhu ka atta) - 1 cup + extra for dusting
  • Gram flour (Besan) - 1/2 cup
  • Jowar (Millet flour) - 1/4 cup
  • Ragi flour (Nachini ka atta) - 1/4 cup
  • Cauliflower (Phool gobhi) - 1/2 cup grated
  • Soya saag (Dill greens) - 2 tablespoon finely chopped
  • Ginger (Grated) - 2 teaspoon
  • Green chilli (Finely chopped) - 1 teaspoon
  • Salt - To taste
  • Cumin seeds (Jeera) - 1 teaspoon
  • Warm water - To knead dough
  • Oil

How to make Multigrain Gobhi Thalipeeth

For Multigrain Gobhi Thalipeeth we need to get ready with all the ingredients and flours. If you do not have any particular flour, then no worries. Continue the recipe with remaining ingredients.

  1. In a mixing bowl take all flours. Add in grated cauliflower, chopped dill greens, ginger, chilli, salt, cumin seeds and mix to combine well.
  2. Knead into a stiff dough with warm water. Cover the bowl with a plate and keep to rest for 10-15 minutes.
  3. After resting knead it lightly once more and divide it into equal balls.
  4. Take one ball, flatten it and dust into flour. Roll into a thick circle of 4-5 centimeters in diameter.
  5. Place carefully on a pre heated griddle or tawa.
  6. When you notice little bubbles appearing on the top flip it with a spatula and apply some oil over the top.
  7. Cook over medium flame while pressing gently with a spatula.
  8. You would notice that the botton side begins to appear brown. At this point flip again and apply oil on the other side.
  9. Once both sides are cooked well with little brown spots, you would notice that thalipeeth has gained crispness too.
  10. Remove from the griddle and continue making thalipeeths with the remaining dough.
  11. Serve hot with ghee.
