Sarson Ka Saag is a classic Punjabi Recipe that is made during winters and served with lots of butter. The ever popular combination of Sarson Ka Saag and Makke Ki Roti is like a match made in heaven.

No matter what sort of paranthas you make, this saag tastes best with Makke Ki Roti or Cornmeal flat bread.

This delightful saag  is made with a combination of 2 main green leafy veggies - Mustard Greens (Sarson ka saag) and Spinach (Palak), though some people also like to add a bit of fresh fenugreek or methi leaves and radish leaves as well. Greens blanched in boiling water are coarsly ground and cooked along with ginger, garlic, chilli and a dash of spices make it a delightful treat . Also while cooking this saag, keep your calorie meters at bay as you won’t get the rich taste if you use butter/ghee miserly. So don’t try to innovate a Low Calorie version of it if you crave for the real flavors.

Recipe Ingredients

  • Mustard leaves (Sarson ka saag) - 1 bunch
  • Spinach leaves (Palak) - 1 bunch
  • Green chilli (Chopped - 1 teaspoon or to taste
  • Ginger (Finelly chopped) - 2 teaspoon
  • Garlic (Finely chopped) - 2 teaspoon
  • Onion (Sliced) - 1 medium
  • Garam masala powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Red chilli powder - 1/2 teaspoon
  • Cumin seeds - 1 teaspoon
  • Dry red chilli - 2 broken
  • Roasted makkai atta (Cornmeal) - 2 tablespoon
  • Salt - To taste
  • Ghee - 1/2 cup

To Serve -

  • A dollop of butter

How to make Sarson Ka Saag

Cooking Sarson Ka Saag at home is a work of Art and needs patience. But the results are drooling. So let us check out the recipe- - 

Washing & Boiling Greens -

  1. To begin with making Sarson Ka Saag boil enough water in a big vessel. Meanwhile wash the greens in a strainer under running water till the water comes out clean. This step is very important as all leafy vegetables need to be cleaned throughly before cooking because if dirt persists, it is going to spoil your dish completely.
  2. Now after washing greens, put them in boiling water for 3-4 minutes. Very carefully drain it on a strainer and wash these greens with cold water to retain the green colour. 

Cooking Sarson Ka Saag -

  1. When the greens cool down a bit grind in a mixer grinder into a fine or slight coarse paste as you prefer. Keep aside.
  2. Heat ghee in a pan and add in cumin seeds and allow to crackle.
  3. Add in chopped ginger, garlic, chilli and fry till it gains a slight golden color and gives out aroma.
  4. To this add in the saag paste, roasted cornmeal or makai ka atta and stir.
  5. Season with salt, red chilli powder, garam masala, coriander powder and stir to combine well.
  6. Bring it to a boil on high heat then lower the flame and simmer for 2 more minutes.
  7. Remove from heat.

Sarson Ka Saag is now ready.
