Aloo Chana Saag is a delightful stir fry recipe from Punjab. You can enjoy this Chana Saag with paranthas and theplas in lunch or dinner.

Green chana also known as Choliya or Harbara is easily available in markets during winters and one can make variety of dishes from it. The greens or tender stems of these chickpeas are also edible and loaded with nutrients. They can be used in the same way as you use other greens like spinach or fenugreek for making curries, stir fries or paranthas.

The recipe to make this Chana saag Aloo is also almost similar to making other stir fries with the combination of potatoes and greens like Soya Saag Aloo and Hare Pyaz Ke Aloo. The robust flavors of ginger, garlic, onion mingle very well with the rustic taste of Chickpea Greens and actually having this stir fry with the meal is a ‘Treat’ in winters which you should not miss.

Though the making of this Chana Saag Aloo is easy, but however the preparation takes a bit of time since all green leafy veggies need to be cleaned, washed and chopped first before adding in any gravy, stir fry or dough. Recipe Ingredients

  • Chana saag (Chickpea greens/choliya saag) - A small bunch
  • Potatoes - 2 large
  • Onion (Sliced) - 1 medium
  • Garlic (Chopped) - 3-4 cloves
  • Ginger (Chopped) - 1 teaspoon
  • Green chilli (Chopped) - To taste
  • Turmeric powder - 1 teaspoon
  • Red chilli powder - 2 teaspoon
  • Garam masala powder - 1 teaspoon
  • Coriander powder (Dhaniya powder) - 1.5 teaspoon
  • Dry mango powder (Amchur) - 1 teaspoon
  • Cumin seeds (Zeera) - 1 teaspoon
  • Salt - To taste
  • Oil - 2 tablespoon

How to make Aloo Chana Saag

To make Aloo Chana Saag we need to clean and wash the greens first.

Cleaning & Washing chana saag -

  1. Pluck the tender stalks from the saag and collect in a sieve.
  2. Now wash this throughly under tap water. Make sure that all the dirt is removed.

Making Aloo Chana Saag -

  1. Now when the saag is properly washed, chop it just the way you chop spinach and other greens. Keep aside.
  2. Also wash and peel potatoes. Cut into cubes or lengthwise as per preferance. Keep aside.
  3. Now when all the preparations are done, we can proceed to cooking. To start with heat oil in a pan or wok.
  4. Add in cumin seeds and when they begin to crackle add chopped ginger, garlic, green chilli, onion and fry till it gains a bit brown color.
  5. Now turn down the heat to sim and add cut potatoes.Sprinkle about 2 tablespoon of water and immediately cover your pan with a lid or plate.
  6. Let it simmer on low flame for 8 minutes till potatoes are cooked half way.
  7. Add in chopped chana saag, turmeric powder, amchur, red chilli powder, salt, garam masala, coriander powder and give a nice mix.
  8. Again cover the pan and simmer for 5 minutes or till potatoes are done to your perfection.
  9. Remove from heat.
  10. Aloo Chana Saag is now ready to be served.
