Ragi Kanji or Salty Ragi Malt also known as Nagli Ambil in Maharashtra is a soulful soup or beverage made with Millet or Ragi flour. Ragi Kanji is a weight loss recipe as well.

This savory drink lightly perked with ginger, chilli, black pepper is usually served for Breakfast since Ragi is known to provide energy and Fiber. Besides it is filling and for a change you must some day skip having Tea and try this Ragi Malt along with your breakfast. It is also great to have it as an evening snack or just as a hearty soup when you plan to skip dinner and instead want to have something refreshing and healthy. Recipe Ingredients

  • Ragi flour (Millet flour/Nachini ka atta) - 2 teaspoon
  • Buttermilk - 2 cups
  • Onion (Finely chopped) - 1 tablespoon
  • Green chilli (finely Chopped) - To taste
  • Ginger (Grated) - 1 teaspoon
  • Black pepper powder (Kali mirch powder) - A pinch or two
  • Curry leaves chopped - 4-7
  • Cumin seeds (Zeera) - 1 teaspoon
  • Asafoetida (Hing) - A pinch
  • Salt - To taste
  • Ghee - 1 teaspoon

How to make Ragi Kanji | Salty Ragi Malt

  1. To make Ragi Kanji, heat ghee in a saucepan and add in cumin seeds, asafoetida and chopped curry leaves.
  2. When they crackle add in chopped onion, green chilli, ginger and saute till tender.
  3. Now it’s time to add in ragi flour. Keeping the flame on low roast till it gains a darker color and you get the aroma of roasted flour.
  4. Slowly and carefully add in buttermilk and stir vigorously with a whisk to avoid any lumps.
  5. Keep on whisking and let it come to a boil. You would notice that it has become thick and gained a porridge kind of consistency.
  6. Season with salt, black pepper powder and remove from heat.
  7. Transfer the porridge in serving cups or bowls and top with chopped onion and fresh coriander before serving.
  8. Serve hot!



Step by Step Photos and Recipe of Ragi Kanji | Salty Ragi Malt

Step 1-

Heat 1/2 tablespoon of ghee in a saucepan.

Step 2-

Add chopped ginger and cumin seeds. Allow to crackle.

Step 3-

Now add in finely chopped onion, green chilli and fry till pink.

Step 4-

Add 1 tablespoon of ragi flour and stir. Roast on low flame till it gains a darker color.

Step 5-

To this add buttermilk and stir.

Step 6-

Allow it to boil on low flame. Add salt, black pepper powder and keep stirring on and off.

Step 7-

Salty Ragi Malt is now ready. Transfer to serving cups and garnish with chopped coriander, onion, black pepper powder.

Step 8-

Enjoy hot…..!!!
