Enchorer Torkari is a Bengali recipe of raw Jackfruit ( Katahal ) and Potatoes, wherein these veggies are cooked in a spicy and thick gravy with pure mustard oil.

This curry is robust with the pungent flavors of ginger, garlic, chilli and lots of powdered and whole spices that make it more aromatic and a perfect dish to go with luchi and rice. Of course, the classic Bengali touch with a hint of sugar has to be there.

The Bengali word for Jackfruit or Katahal is Enchor. It is also known as Gaach Patha where Gaach means Tree and Patha means Mutton. Now why it is so called, probably because after cooking the taste and texture of Jackfruit resembles with meat. That is the reason why it is often used to cook Koftas, Biryanis and Kormas. Well, we tried our hands on making Katahal Ka Keema and it turned out wonderful. Do try this recipe for sure!

A Note - Cutting Jackfruit is a tricky task and not everyone’s cup of tea. So instead of buying whole jackfruit from the market, we would suggest to buy a pack of ready made cut pieces that is easily available in departmental stores.

Recipe Ingredients

  • Jackfruit (Peeled & Cut into pieces)- 250 gms.
  • Potato (Peeled) - 2 medium
  • Onion (Chopped) - 1 large
  • Green chilli (Slit) - 2
  • Ginger garlic chilli paste - 1 teaspoon
  • Turmeric powder - 1 teaspoon
  • Red chilli powder - 1 teaspoon
  • Garam masala powder - 2 teaspoon
  • Sugar - 1/4 teaspoon
  • Salt - To taste
  • Mustard oil 

Whole Spices -

  • Cumin seeds (Jeera) - 1 teaspoon
  • Cloves (Laung) - 4
  • Black pepper (Kali mirch) - 4-5
  • Black cardamom (Badi elaichi) - 1 slightly crushed
  • Cinnamon (Dalchini) - 1 inch stick
  • Bay leaf (Tej patta) - 2

How to make Enchorer Torkari

To begin with making this rich Bengali style Enchorer Torkari we need to heat sufficient amount of mustard oil in a pan.

  1. Fry the jackfruit pieces till golden brown and empty on a plate. In the same oil also fry the potato cubes till golden. Transfer to a plate and keep aside.
  2. Now in another pan heat about 2 tablespoon of mustard oil. Add in all the whole spices and let them crackle.
  3. Add in the chopped onion and fry till they get a lovely brown color.
  4. To this add in garlic ginger chilli paste and cook till the raw smell goes and the masala oozes oil.
  5. Now carefully add in the fried veggies and saute in the masala for a minute.
  6. Add in about 1 cup of water, salt, sugar and all the powdered spices. Give a nice stir to combine well. Bring it to a boil on high heat.
  7. Now reduce the flame, cover your pan and simmer for 5 minutes. Remove from heat.
  8. Enchorer Torkari is now ready. Garnish with freshly chopped coriander and serve hot.
