Punjabi Chole is one of the most popular dish from the very rich Punjabi cuisine and every household inherits a unique chole bhature recipe. Go to any North Indian restaurant and you will find chole bhature in the menu.  A spiced gravy with chole and fluffy bhature can be the perfect brunch to start your day.

Chole, Kabuli chana or chickpeas are soaked overnight and cooked in an array of traditional spices to make one of the most delectable dish. The ultimate combination of ‘Choley’ and ‘Bhature’ (Deep fried Indian bread) is also one of the prominent dish for breakfast, lunch, street food and festive meals.

These Punjabi style chole are made with the gravy, but some people also prefer to have the 'No Gravy' version or the 'Sookhe Chole' also known as Chana Masala or Pindi Choley in most regions.

Recipe Ingredients

  • Kabuli chana (Chickpeas) – 150 gms. or 2 cups approx.
  • Onion – 1 large
  • Tomato – 2
  • Ginger garlic paste – 2 teaspoon
  • Tea bag – 1
  • Choley masala – 3 teaspoon
  • Red chilly powder – 1 teaspoon
  • Baking soda or soda-bi-carb – A pinch or two
  • Water – 2 cups or as required for gravy
  • Salt – To taste
  • Oil – 3-4 tablespoon

Whole spices –

  • Carom seeds – 1 teaspoon
  • Bay leaf – 2-3
  • Cloves – 4-6
  • Cinnamon – 2 inch stick
  • Black cardamom – 2

How to make Punjabi Chole | Instructions to make punjabi chole

  • To begin with making the traditional ‘Choley masala’, we need to wash & soak the chana in sufficient water for 8 to 10 hrs. at least.
  • Cook these soaked chana along with water, cinnamon stick, bay leaves, tea bag and soda-bi-carb in a pressure cooker for 4-5 whistles. Remove from heat and let the pressure release on its own.
  • Meanwhile, we would be making masala for the gravy.
  • For this, grind onion and tomato separately in the mixer to make a puree.
  • Now, heat oil in a pan and add carom seeds n black cardamom. When they begin to crackle add onion puree and sauté for a minute or two.
  • Next add tomato puree, ginger garlic paste, red chilly powder, choley masala and sauté till oil separates from the masala. The masala is ready, remove from heat.
  • Open the pressure cooker and discard the whole spices and tea bag.
  • Mix in the cooked masala and cook (No pressure cooking) on medium to high heat till it comes to a boil. If you want more gravy, then add some water at this stage. Also check the salt.
  • After a boil, reduce heat and simmer for 5 minutes. Switch off the flame.

Punjabi choley are ready to be served.
