Recipe Ingredients

  • Wheat flour (Atta) - 2 cups + extra for dusting
  • Salt - 1/2 teaspoon
  • Water - To make dough
  • Carom seeds (Ajwain) - 1/2 teaspoon
  • Ghee or oil
  • For Filling -
  • Potatoes (Boiled-Peeled-Mashed) - 2 large or 3 medium
  • Fenugreek/Methi leaves (Washed-Cleaned-Chopped) - 1 cup
  • Cumin seeds (Jeera) - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Red chilli powder - 1 teaspoon
  • Dry mango powder (Amchur) - 1 teaspoon
  • Ginger grated - 1 teaspoon
  • Green chilli chopped - To taste
  • Salt - To taste

How to make Aloo Methi Paratha

  • To make this spicy Aloo Methi Paratha we need to make the filling first. 
  • Making Dough -
  • For making the dough in a large mixing bowl take wheat flour, salt, carom seeds and mix to combine well. Now knead a soft dough with water. Cover this dough with a muslin cloth and keep to rest for 10 minutes till we make the filling.
  • Making Filling -
  • Now to make the zesty filling of Aloo Methi we need to take mashed potatoes in a bowl.
  • Add in all the ingredients including chopped methi leaves, salt, powdered spices, ginger, chilli and mix to combine well. Check salt, spices as you might want to adjust something to taste.
  • Filling for paranthas is now ready and we can proceed to rolling and cooking Aloo Methi Parathas.
  • Rolling & Cooking Paranthas -
  • Divide your dough into 8-10 equal size balls. Take one ball, dust into flour and flatten with your palm.
  • Roll it into a medium circle say 5 centimeters in diameter. Put some filling in the center and bring the edges together to seal. Again dust into flour and flatten slightly.
  • Roll it out in a circle with applying light pressure and not too much as it would bring the filling out.
  • On a hot griddle or tawa put the rolled parantha and let it cook for half a minute.
  • Flip it and apply some ghee or oil on top. Let it cook slightly at the bottom and again flip.
  • Spread some ghee on the other side as well which is now at the top. Flip and cook either sides while gently pressing with a spatula.
  • Aloo Methi Parantha is now ready. Top with butter or ghee and serve hot.
  • Finish off the dough and filling by making parathas the same way.
