Mooli Paratha are very popular recipe in Punjab and are usually served in Breakfast with lots of butter and paired with Pickle and Curd. These are delicious spiced parathas made with freshly grated radish, radish leaves, wheat flour, green chilli and spices. Cooking these lovely parathas in nothing less than a treat, the whiffs of oil and mooli roasting together on a hot griddle fill the whole house with aroma that automatically increases your appetite. Besides they are nutritious, energetic and perfect to be carried for office or travels.

The method of rolling Mooli Parathas is same as that of the Aloo Paratha, the only difference lies in the making of ‘Filling’. Now since there is high water content in Radish, hence it is a challenge to make a perfect stuffing with it so that the paratha doesn’t breaks or turns soggy while rolling.

For Breakfast or Lunch there are so many pickles that you can pair these Mooli Parathas with like - Mango Pickle, Garlic Pickle, Aam ki Launji, Ginger Pickle, Green Chilli Pickle and more.

For a change serve Mooli Parathas with a nice spread of butter or ghee and a generous topping of Andhra Paruppu Podi which is a spiced lentil powder and goes great with parathas, rice, idli and dosa.

Since Mooli Parathas are filling in nature, hence you can also serve them for Lunch or Dinner with regular curries or stir fries like Aloo Gobhi Curry,  Aloo Matar Curry and more.

Recipe Ingredients

  • Wheat flour - 2 cups + extra for dusting
  • Radish with fresh leaves - 1 large or 2 medium
  • Salt - To taste
  • Ginger (Finely chopped) - 1 teaspoon
  • Green chilli (Finely chopped) - 1 teaspoon
  • Red chilli powder - 1/2 teaspoon
  • Dry mango powder (Amchur) - 1/4 teaspoon
  • Coriander powder (Dhaniya powder) - 1/4 teaspoon
  • Carom seeds (Ajwain) - 1/4 teaspoon
  • Water - As required to knead dough
  • Oil or ghee

How to make Mooli Paratha for healthy breakfast

Making Dough -

  1.  For making mooli Paratha, we need to first make a dough of wheat flour, some salt and water. This dough should be soft and not stiff. Cover and keep to rest for 10 minutes. 

Making Radish Filling - 

  1. Wash radish to remove dirt and finely chop the greens (Mooli patte). Peel radish and grate.
  2. Combine chopped greens and grated radish in a bowl, add some salt, mix and keep aside for 5-7 minutes.
  3. After resting you would notice that it has turned very soggy which is definitely not apt for filling. So to remove this excess water take this mixture on a clean muslin cloth, tie like a ‘Potli’ or ‘Bundle’ and squeeze as much amount of water you can.
  4. Now in a mixing bowl take squeezed radish & greens mixture and add chopped chilli, ginger, salt and all powdered spices. Lightly mix to make a homogeneous mixture. Filling is ready and let’s proceed to the ‘Rolling & Cooking’ part.  

Rolling & Cooking Mooli Paratha -

  1. Divide dough into lemon size balls and keep some dry flour separately for dusting.
  2. Take one ball, dust in flour and roll in a small circle of 3-4 centimeters of diameter.
  3. Put a spoonful of filling in the centre, bring the sides together to make a stuffed ball. Dust in flour and gently roll out in a circle with 5-6 inches of diameter.
  4. Place paratha on a medium hot griddle or tawa. When tiny bubbles appear on the top flip it. Apply oil or ghee on top, cook for about 30 seconds and flip. Cook both sides with ghee or oil till brown spots appear.
  5. Remove from griddle and serve hot. Make Radish parathas similar way with the remaining dough and filling.
