Gobi Paratha is another variant of paratha recipe. To make Gobi Paratha we need cauliflower, wheet floor, onion, coriander , green chilli and spices from ingredients list.

Gobi Paratha is a delicious and filling Breakfast In North India especially in the state of Punjab where people relish these with lots of butter and pickle. These parathas are made with a lip smacking filling made of seasonal cauliflower, chopped coriander, ginger and green chilli.

Like all the other stuffed paratha recipes, the recipe of making Gobhi Paratha is also somewhat similar and the only difference is in making of the ‘Filling’. But however, this is where the crux lies. Not only in chopped veggies, there should also be a perfect balance in spices like garam masala, chaat masala and if you could get them right, then there is no way that your Gobhi Parathas are going to come out bad. Recipe Ingredients

  • Oil - As required to roast parathas on hot griddle/tawa
  • Whole wheat flour (Gehu ka atta) - 3 cups + extra for dusting
  • Water - To make dough
  • Salt - 1/2 teaspoon 
  • Cauliflower (Gobi) - 1 medium
  • Onion (Chopped) - 1 medium
  • Fresh coriander (Chopped) - A handful
  • Green chilli (Finely chopped) - To taste
  • Ginger (Grated) - 2 teaspoon
  • Turmeric powder - 1 teaspoon
  • Red chilli powder - 1 teaspoon
  • Garam masala powder - 1 teaspoon or to taste
  • Black pepper powder - 1/4 teaspoon
  • Cumin seeds (Zeera) - 1/2 teaspoon
  • Chaat masala - 1 teaspoon
  • Salt - To taste
  • Oil - 1/2 tablespoon

How to make Gobi Paratha

  • To make Punjabi style Gobi Paratha we need to par boil the cauliflower to make filling.
  • Wash cauliflower and break into florets. Boil these florets in water with some salt in a pan till they are just tender and not completely cooked.
  • Drain away the water and roughly mash these florets with a spatula.
  • Now heat oil in a pan and add cumin seeds. When they begin to crackle add roughly mashed cauliflower, ginger, green chilli, salt and all the powdered spices.
  • Give a nice mix and cook on medium flame for a minute or two. Finish with chopped coriander and remove from heat.
  • Filling is now ready to make parathas, but before that we need to cool this filling to room temperature otherwise while stuffing, paratha could get soggy making it difficult to roll.
  • So just spread the filling on a plate and put under the fan for 10 minutes and then we can proceed to making dough and rolling.
  • In a mixing bowl combine together wheat flour, salt and form a soft dough with water.
  • Divide the dough into 10 equal size balls. Take one ball, flatten slightly, dust into flour and roll into a medium circle say 4 inches in diameter.
  • Place 1 tablespoon of the filling at the center, bring the edges together and seal.
  • Dust into flour and again roll into a circle say 6-7 inches diameter.
  • Gently place this rolled paratha on hot griddle or tawa. Cook on medium flame while smearing oil or ghee on both sides till little brown spots appear and paratha seems cooked.
  • Transfer to a plate and finish off the dough and filling while making parathas similar way.
