Dhaba Style Dal Fry is a protein rich and aromatic dal preparation that is very popular in the highway side restaurants known as Dhabas. The speciality of this Dhaba style dal fry is the amazing tempering or Tadka with Ghee along with onion, tomatoes, ginger, green chilli, garlic and some assorted spices.

Hence, it is spicy and robust and one of the best way to enjoy lunch or dinner if you want to break the monotony in your meals and replace your regular dal or kadhi with this amazing dal fry.

This dal is usually made with the combination of two dals - Toor dal and Chana dal, however you can also cook it with more variety of lentils like the Navratan Dal. Besides, Dhaba style dal fry is cooked slight ‘Thick’ and not like simple Dal Tadka what we usually cook in our homes. Hence, this dal not only tastes great with rice, but also goes perfect with chapatis due to its thick consistency.

 

The ‘Dhaba Culture' -

Did you know, Dhabas are basically small roadside restaurants or Tea Points especially located on highways in Punjab and other parts of North India. They generally serve the local ‘Food’ like Dal, Kadhi, Sabzi, Chapati, Rice and ‘Snacks’ like Bread- Omelet, Pakoda, Farsaan, Samosa etc. Though, there is nothing fancy in their setting or food, but most sell freshly made food that is good in taste and economic on the pockets too.

Since highways are always busy with trucks and travellers, hence these Dhabas get majority of customers from them. So while you are travelling on a highway, if you see a ‘Dhaba’ do not miss a chace to enjoy the food. It would be an experiance for you !

Recipe Ingredients

  • Toor dal/Arahar dal - 3/4 cup
  • Chana dal/Cholar dal - 1/2 cup
  • Salt - To taste
  • Turmeric powder - 1 teaspoon
  • Red chilli powder - 1/2 teaspoon
  • Water - 2 1/2 cups 

For Tempering - 

  • Onion (Sliced) - 1 medium
  • Tomato (Chopped) - 1 medium
  • Garlic (Chopped) - 4-5 cloves
  • Green chilly (Slit) - 2
  • Ginger (Chopped) - 1 teaspoon
  • Ghee - 1 tablespoon
  • Cumin seeds - 1 teaspoon

How to make Dhaba Style Dal Fry

Making of Dhaba Style Dal Fry at home is quite easy and once we proceed with this recipe, you would notice this.
  1. Wash and soak toor dal and chana dal together in water for 1 hour.
  2. After soaking drain the excess water. Now in a pressure cooker take this soaked dal, turmeric powder, red chilli powder, salt and about 2 1/2 cups of water.
  3. Close the lid and pressure cook for 1 whistle on high flame.
  4. Now reduce the flame to low and cook for another 5-7 minutes. Remove from flame and let the pressure settle down before opening the lid.
  5. Meanwhile, let us make the tempering. For this heat ghee in a tadka pan or any pan you have and add in cumin seeds.
  6. When they begin to splutter, add chopped onion-garlic-green chilli and fry till golden pink.
  7. Now add in the tomato and cook on medium flame till it gets mushy and releases ghee. Switch off the flame.
  8. Pour this tempering over cooked dal and serve hot.

Note -

After cooking dal, blend it slightly with a laddle or blender. If you find that the consistency is too thick, then add little amount of boiling water.
