Recipe Ingredients

  • Potato - 2 medium
  • Eggplants (Small brinjal) - 3-4
  • Onion - 1 medium
  • Tomato - 1 medium
  • Cumin seeds (Jeera) - 1 teaspoon
  • Asafoetida (Hing) - A pinch or two
  • Garam masala powder - 1-2 teaspoon
  • Red chilly powder - 1/2 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Refined oil - 1 tablespoon
  • Salt - To taste
  • Water - 1 cup

How to make Aloo Baingan Ki Sabzi

To begin with making this delicious Aloo Baingan ki Sabzi we need to get ready with the veggies. So first wash all the veggies to remove the impurities.

  1. Now peel potatoes and cut in cubes. Similarly, remove the stalks in eggplants and cut in cubes.
  2. Roughly chop onion & tomato in large pieces.
  3. Now heat oil in a pressure cooker and add cumin seeds & hing.
  4. When they begin to crackle add all the veggies, spices, salt and water.
  5. Close the lid and pressure cook for 3-4 whistles. Remove from heat and let the pressure settle down.
  6. Open the lid and stir with a spoon.

Aloo baingan is ready. Wasnt that quick and simple….???
