Punjabi style carrots and peas stir fry is a staple diet during winters and teams up very well with paranthas, phulkas, rice along with any dal or curry. This is a simple recipe with handful of ingredients that can be put together in less than 20 minutes or so. To keep it healthier we have used just 1 tablespoon of oil and the added amchur (Dry mango powder) which perfectly balances the sweetness of carrots. The combination of fresh seasonal carrots and green peas is sublime and the color contrast seems very inviting in this dish. You can also pack for lunch box with some puris and pickle.
How about planning for a healthy meal without compromising on taste?
Pair this gajar matar ki subzi with Bengali cholar dal, baingan bharta and aloo channe ka saag. Do not forget to serve instant ginger pickle which is made without oil.
