Rajasthani Kadhi is a lip smacking curry made with curd, gramflour (Besan), potatoes, assorted spices and pairs perfectly with chapatis and rice. This Rajasthani Kadhi is irresistible and a staple diet in states like Bihar, Uttar Pradesh, Rajasthan and Jharkhand.

Boiled potatoes simmered with green chili, fenugreek seeds, cloves taste divine and the final tempering of ghee adds cherry to the cake making it truly irresistible.

We all know that Kadhi Chawal is a comfort food, but actually we are used to cooking kadhis with ‘Pakodis’ like the Punjabi Kadhi Pakodi and Rajasthani Palak Pakodi Kadhi. Though these recipes taste phenominal, however the fact that you need to prepare for making and deep frying pakodis or fritters is little time consuming. So if someday you want to make a quick meal or simply don’t have the inclination to fry pakodis, then this Aloo Kadhi recipe would be at your rescue. Team with tawa phulkas or plain rice along with onion salad and you are sorted for lunch or dinner.

While making this aloo kadhi I roughly mash boiled potatoes to add in the gravy, though you can cut them in dices too. Well if you add ‘Whole Baby Potatoes’ to the kadhi then it is going to look more presentable.

Recipe Ingredients

  • Potatoes (Boiled-Peeled) - 2-3 medium
  • Curd (Preferably sour) - 1 cup or 2 cups buttermilk
  • Gramflour (Besan) - 1 tablespoon
  • Water - 1 1/2 cup (Adjustable)
  • Oil- 1/2 tablespoon
  • Fenugreek seeds (Methi) - 1 teaspoon
  • Cloves (Laung) - 4
  • Turmeric powder - 1 teaspoon
  • Salt - To taste
  • Green chilli (Slit) - 2 

For Tempering - 

  • Ghee - 1-2 tablespoon
  • Red chilli powder - 1 teaspoon
  • Dry red chilli - 2 broken
  • Asafoetida (Hing) - 1/4 teaspoon
  • Cumin seeds - 1 teaspoon

How to make Rajasthani Kadhi

To begin with making this delicious Aloo Kadhi we need to whisk curd in a bowl with turmeric powder and gram flour.

  1. Whisk till you get a smooth homogeneous batter. Add water and mix again. If you are using buttermilk then no need to add water. Keep aside.
  2. Now in a large wok or pan heat 1/2 tablespoon of oil and add fenugreek seeds, cloves, prepared curd/buttermilk batter and cook on high flame till it comes to a boil.
  3. Once it begins to boil, reduce the flame to medium and add roughly mashed or diced potatoes. Season with salt and cook for 5-7 minutes or till you see that it has gained thickness to your preferance.
  4. Remove from flame and now we need to do the final tempering. So for tempering or tadka take a pan and heat ghee. Add in cumin seeds, asafoetida, dry red chilli, chilli powder and immediately pour it over the prepared kadhi.
