‘Arvi Masala Curry’ is one of the easiest & delicious recipe of cooking arbi with an array of herbs and spices. The unique tempering with carom seeds give it a very distinct flavor, aroma and make it truly palatable.

Arvi or arbi stir fry without gravy is very common and is made in most of the households. Here we give you this classic recipe to make a thick gravy based arvi curry in pressure cooker. Hence, it is hassle free and takes considerably less time to cook. Goes great with all types of Indian breads and cumin rice.

Did you know, arvi or arbi is also known as colocasia, taro, eddo is basically a root vegetable and is full of starch. Hence boiled arbi is often used as a binding agent for cutlets, kebabs and patties. The broad leaves of arbi are also edible and make delicious ‘Patra’ or ‘Patrode’.



This arvi curry is spicy and pairs very well with rotis, spring onion parantha and moong dal cheela. Team up with Konkani ambe upkari,  kadala curry or palak patra and enjoy !

In lunch box, pair Arbi curry with Missi Rotis or Ajwain Puris. You are going to love your meal.

Arbi Masala is easiest recipe to make with arbi. Arbi cooked with herbs and spices is truly palatable. Arbi masala stir fry without gravy is very common.

Recipe Ingredients

  • Arbi – 500 gms.
  • Onion – 1 large
  • Tomato – 1 medium
  • Ginger garlic paste – 2 tea spoon
  • Turmeric powder – 1 tea spoon
  • Garam masala powder – 1.5 tea spoon
  • Coriander powder – 1 tea spoon
  • Red chilly powder – 1 tea spoon
  • Salt – To taste
  • Water – 2 cups or as required for gravy
  • Oil – 3 table spoon

How to make Arbi Masala

  • Peel arvi and cut in 1 inch pieces or quarters as per desire. Keep aside.
  • Also finely chop onion & tomato. Keep aside.
  • Now, heat oil in a pressure cooker and add all the whole spices.
  • When they begin to crakle  add chopped onion, turmeric powder and sauté till pink.
  • Add tomatoes, ginger garlic paste and all the powdered spices. Give a nice stir and cook on medium heat till oil separates from the masala.
  • Now add water and arvi pieces. Season with salt and give a stir.
  • Close the lid and pressure cook for 2-3 whistles or till arvi is cooked to your perfection.
  • Remove from heat and let the pressure settle down on its own.

‘Arvi masala curry’ is ready. Serve with piping hot rotis, paranthas, puris or naan.

Tips –

  • Juices of raw arbi can be slightly irritating to the skin. Hence, it is advisable to either wear kitchen gloves or apply some oil on your hands while peeling/cutting it.
  • Before serving ‘Arbi masala curry’ drizzle a dollop of ‘Desi ghee’(Indian clarified butter) for that classic aroma and flavor.
