This Egg Cury Recipe  is a simple home style recipe to make delicious egg curry with onion, tomatoes and lots of aromatic spices. We have added a slight touch of ‘Fennel seeds’ from Kashmiri cuisine to enhance the flavors. But, you can slightly ground these fennel seeds (Sauf) to bring out the aroma.



Make your lunch spread special and serve this flavorful egg curry with kadala curry and paneer tawa masala. Team up with healthy wood apple lemon squash (Bael aur nimbu ka sharbat) in summers !

Egg Curry

Egg Curry is easy to make. A few spices, onions, tomatoes and ginger garlic paste made this recipe a bit spicy. Egg Curry tastes good with Parathas or Roties and Rice.

Recipe Ingredients

  • Eggs (Hard boiled n peeled) – 4
  • Onion – 2 medium
  • Tomato – 1 large
  • Ginger garlic paste – 2 teaspoon
  • Garam masala powder – 2 teaspoon
  • Coriander powder – 1 teaspoon
  • Black pepper powder – 1/4 teaspoon
  • Red chilly powder – 1 teaspoon
  • Turmeric powder – 1 teaspoon
  • Salt – To taste
  • Water – 1.5 cups or as required for gravy
  • Oil – 3 tablespoon

Whole spices –

  • Cumin seeds – 1 teaspoon
  • Fennel seeds – 1 teaspoon
  • Cinnamon – 1 inch stick
  • Bay leaf – 2
  • Black peppercorns – 5-8

How to make Egg Curry

  • Shallow fry the eggs n keep aside. Well, this step is optional. You can put eggs in the gravy without shallow frying too.
  • For making the gravy, heat oil in a deep pan or wok. Add cumin seeds and all the whole spices. Fry for a minute till the cumin seeds crackle n you get a nice aroma of spices.
  • Add chopped onion, turmeric powder and sauté till pink.
  • To this add chopped tomato, ginger garlic paste and all powdered spices. Saute on medium heat till tomatoes get mushy and the masala releases oil.
  • Now add water and salt. Increase the flame and let it come to boil.
  • Gently, slide the eggs into the gravy. Simmer on low heat for 5-7 minutes or till the gravy becomes thick as per preference.

Simple home style ‘Egg Curry’ is ready. Relish with phulkas, naan, rice or pulao.
