‘Boondi Kadhi’ is a variation to the Punjabi style pakode wali kadhi or kadhi pakodi and a great dish when you are lazy enough to make pakodis or fritters for kadhi, as a packet of ‘Boondi’comes handy. These tiny gramflour balls or boondi have a very unique taste and when combined with kadhi make a dish which is easy to make and soulful to taste. This boondi kadhi recipe is also a keeper for days when you want to break yourself from the monotony of eating veggies and crave for something unusual and palatable. But while you’re trying out this recipe, do not miss to make rice, as boondi kadhi and rice is a match made in heaven same as of chole and bhature!

Boondi kadhi tastes best with rice. For a special weekend meal try substituting steamed rice with jeera rice, mint rice or Maharashtrian style green beans pulao. Pair with pavakkai stir fry or khatte meethe aloo along with some phulkas and Punjabi namkeen lassi.

Boondi Kadhi

Recipe Ingredients

  • Boondi – 1 cup
  • Yogurt (Sour) – 1 cup
  • Gramflour (Besan) – 3-4 tablespoon
  • Turmeric powder – 1 teaspoon
  • Salt – To taste
  • Water – 4 cups (Adjustable)

For tempering –

  • Oil or ghee – 2 tablespoon
  • Asafetida – ¼ teaspoon
  • Red chilly powder – 1 teaspoon
  • Cumin seeds – 1 teaspoon
  • Coriander seeds (Crushed) – 1 teaspoon

To serve –

  • Freshly chopped coriander
  • Ghee

How to make Boondi Kadhi

  • To begin with making this quick boondi kadhi, we need a large mixing bowl.
  • Combine all the ingredients under first category (Except boondi) and make a thick batter with water. Take care that there should not be any lumps.
  • Next add in more water and stir to make a slurry.
  • Transfer this slurry or mixture to a wok and cook on medium flame.
  • When it comes to a boil, lower the flame and cook for another 5 minutes.
  • Check salt, you might want to adjust it.
  • Kadhi is now ready. Remove from heat, add in the boondi and immediately cover the wok with a lid.
  • Leave for 10 minutes.

Now its time to add some more flavors by tempering.

For tempering –

  • For tempering boondi kadhi, heat some oil or ghee in a pan.
  • Add in cumin seeds, coriander seeds and asafetida. When they begin to crackle switch off the flame and add red chilly powder. Tempering is ready, immediately pour it over boondi kadhi and again cover the wok with lid. Garnish with freshly chopped coriander.
  • Delicious boondi kadhi is now ready to be served. Serve as suggested above.
