‘Pohe ka pulav’ is a delicious treat for vegetarian lovers. It is made by cooking beaten rice or poha with assorted veggies & spices and therefore, has a very distinct taste from a typical rice pulav. Aval or poha is a staple at home, so if you have some blanched or boiled vegetables in hand too, then voila…..you just need few steps to combine everything and make this enticing poha pulao.

This is a fuss free dish that can be made with your choice of vegetables and served as breakfast or tea time snack with some chutney or pickle. Also makes a healthy lunch box snack for kids.

Recipe Ingredients

  • Thick poha/beaten rice – 1.5 cups
  • Green peas – 1 cup
  • Potato – 2 large
  • Onion (Sliced)  – 1 large
  • Ginger garlic paste – 1 tsp
  • Cumin seeds – 1 tsp
  • Turmeric powder – 1 tsp
  • Red chilly powder – 1.5 tsp or to taste
  • Garam masala powder – 1 tsp
  • Oil – 3 tsp
  • Water – 1/2 cup or as required

To garnish –

  • Freshly chopped coriander

How to make Poha Pulav

  • Wash poha in a strainer, drain well and keep aside for 5-10 minutes.
  • Also peel potatoes and cut in 1 inch cubes. Keep aside.
  • Heat oil in a wok.  Add cumin seeds, turmeric powder and sliced onion. Cook till onions get a nice golden color.
  • Now, add in green peas and potatoes. Give a stir and add water. Cover with lid and cook on low to medium flame for 7-10 minutes or till peas and potatoes are cooked to perfection. You can add more water if required.
  • Open the lid and add washed poha, red chilly powder, garam masala and salt. Give a nice stir and cook for 5-7 minutes on medium flame.

Pohe ka pulav is ready. Remove from heat and serve with some freshly chopped mint or coriander on top. Enjoy!

Tips –

  • Use ‘Thick’ variety of poha for this pulav. ‘Thin’ variety won’t give good results.
  • Always wash poha in a ‘Strainer’ to drain away all the excess water. This is very important to make a fluffy poha pulav. Excess moisture would make your dish soggy.
  • You can add your choice of veggies like beans, carrots, mushrooms etc.
