Potato capsicum stir fry or aloo Shimla mirch subzi is one of those recipes that are made almost on regular basis in North Indian kitchens. Undoubtedly because not only the whole recipe is quite easy, but also because of those simple and delectable flavors that work great with all sorts of Indian breads and rice. Due to the ease in the whole cooking process this aloo Shimla mirch subzi is often cooked during rush morning hours and packed in lunch boxes with tawa paranthas. Usually this stir fry is made using potatoes and green capsicum, but if you want you can opt for red or yellow capsicum too, or even try out all the three together for a splash of colors.
Well I like to keep my dish spicy, so while cooking this stir fry I prefer to just remove the stalk of capsicum and cut it along with the seeds. But if you prefer less heat, then discard the seeds.
*’Lunch Box’ should be the store house of energy to nourish you with essential vitamins during working hours. They should be filling and light at the same time. Pack a balanced lunch box for your office with aloo Shimla mirch subzi, palak tamatar subzi and 1-2 pudina/mint paranthas or tawa paranthas along with a small bowl of cumin rice or masala khichidi. A nourishing salad or raita is must, so you can pack beetroot raita or kachumbar salad in spill proof boxes for that instant energy. This would ensure a substantial doze of raw veggies in your regular diet.
Remember 4-5 small portions of different dishes not only keep your meal interesting and break you from the monotony, but also provide you with the necessary doze of health.
*For school tiffin make healthy vegetable rolls. Layer methi thepla or palak thepla with sweet sonth chutney or tomato ketchup and put some aloo Shimla mirch subzi. Spread finely sliced carrots, cabbage and roll this thepla. Quick and easy vegetable rolls are ready, pack these with aluminium foil to keep them intact.
