‘Pudina’ or ‘Mint’ parantha is a delicious unleavened flat bread made with assorted spices and mint as the main ingredient. Mint has a natural aroma that cannot be locked up and when toasted on griddle, the whiff of fresh mint, cumin seeds and spices fill the atmosphere and increase your appeitite.

The taste is to die for and when paired with curries and gravies, makes a nutritious meal in itself. You can also serve it with some fresh curd and pickle as a wholesome breakfast and pack in lunch boxes too with stir fried veggies and raita. Such amazing versatility and the simplicity of recipe also makes it one of the popular foods listed in Indian and Asian restaurant menus. Recipe Ingredients

  • Wheat flour – 3 cups + For dusting
  • Fresh mint leaves – ¾ cup (Tightly packed)
  • Cumin seeds – 1 tablespoon
  • Carom seeds – 1 teaspoon
  • Green chilly (Minced or chopped) – 1 teaspoon or to taste
  • Black salt – 1 teaspoon
  • White salt – 1 teaspoon or to taste
  • Chaat masala – 1 teaspoon
  • Water – As required to make dough
  • Oil – As required

How to make Pudina Parantha

  • To begin with making these spiced and aromatic mint or pudina paranthas, we need to wash the mint leaves first.
  • Tear these mint leaves roughly and keep aside.
  • Now take a large mixing bowl. Combine all the ingredients including mint leaves, flour, spices and form a soft dough with water. Do not combine oil.
  • Cover this dough with a wet muslin cloth and keep to rest for 10 minutes.
  • After resting, again knead this dough.
  • Make equal size balls (The size of a lemon) from this dough.
  • Now take one ball, flatten slightly and dust with flour. Roll into a small disc, say about 4 inches in diameter.
  • Brush it with oil and fold into semi circle.
  • Again brush with oil and fold. This would give you a quarter or triangle kind of shape.
  • Dust this with flour and roll into a big disc, the same way as you roll for rotis or plain parathas.
  • Place on a hot tawa or griddle. Cook on medium flame or till it changes in color and begins to puff slightly.
  • Brush with oil and flip.
  • Apply some oil on this side as well.
  • Cook on both sides.
  • Transfer to a serving plate and continue making pudina paranthas with the remaining dough.
  • Our spiced mint paratha is now ready. Serve with curries, dal and curd.
