A very healthy recipe that you can put together in less than 15 minutes if you have some boiled sweet corn in hand. We have mildly spiced the veggies with crushed black pepper and tossed in lemon juice for extra zing. To keep it simple and healthy, the whole of cooking is done in just 1 tablespoon of oil. Makes a quick lunch or dinner recipe and tastes absolutely fantastic as a side dish with phulkas and paranthas along with a vegetable stew or dal.

Recipe Ingredients

  • Spinach (Washed, picked & finely chopped) – 2-3 cups
  • Sweet corn (Boiled) – 1 cup
  • (Get tips n tricks to perfectly boil sweet corn in microwave)
  • Garlic (Chopped) – 1 teaspoon
  • Ginger (Chopped) – 1 teaspoon
  • Red chilly powder – 1/2 teaspoon
  • Coriander powder – 1 teaspoon
  • Cumin powder – 1/2 teaspoon
  • Black pepper (Crushed) – 1/4 teaspoon
  • Dry red chilly – 2 broken in half
  • Cumin seeds – 1 teaspoon
  • Lemon juice – 2 teaspoon
  • Salt – To taste
  • Oil – 1 tablespoon

How to make Spinach And Sweet Corn Stir Fry

  • To begin with the recipe heat oil in a pan and add cumin seeds, dry chilly, garlic, ginger. Saute till garlic turns light brown in color.
  • Add in the spinach, sweet corn and saute on medium flame for a couple of minutes. Keep stirring occasionally, do not cover the pan otherwise it may turn very soggy
  • Now add in all the powdered spices, crushed pepper, salt and stir. Cook for another 2 minutes so that all the flavors can come together.
  • Finally, add lemon juice and toss.
  • Turn off the heat.
