French beans and potato curry is a simple and spicy one pot curry that you can quickly make for lunch or dinner and savor with phulkas, paranthas and rice. Made with all the staple ingredients, this is a pressure cooker recipe and hence takes less time to cook with minimal efforts.

As you know, making curries in pressure cooker is super simple and when you have tried a few combinations, then it becomes like a child’s play. Basically you can combine any assorted veggie and cook with an onion tomato based gravy or even use cream or yogurt to make it rich. The key lies in the proportionate spices being used and the right way to sauté them because this gives the real flavor to the curry, doesn’t matter what sort or combo of veggie you are using.

French beans and potato curry tastes best when paired with dhaniya masala parantha or puri. For a change you can try serving with masala puri along with dal makhni or kadala curry with home made mango pickle and kachumbar salad. Do not miss to serve chaas or some roasted papad to complete the meal!

How to make French Beans And Potato Curry

  • To begin with making this spicy French beans and potato curry, we need to peel the potatoes and cut in 1 inch cubes. Alternatively you can also cut lengthwise. Also cut beans in 1-2 inch pieces, slice the onion and chop tomatoes. Keep aside.
  • Now, when our veggies are ready to be cooked, we need to heat oil in a pressure cooker. Add in all the whole spices and fry for a minute or less on medium flame. You would notice a nice change in color of these spices.
  • It’s time to add the sliced onion and cook till it turns golden brown. Add in chopped tomato, ginger garlic paste and cook till the tomato gets mushy and the the raw smell og ginger garlic goes.
  • You can sprinkle some water if you find that the masala is burning or sticking at the bottom
  • Now add in all the powdered spices and cook till the masala seperates from the oil.
  • Add cut vegetables, water, salt and give a nice stir.
  • Pressure cook on high heat for 3-4 whistles and switch off the flame.
  • Do not open the lid immediately and let the pressure release on its own.
