How to make Lauki Kofta

For Kofta balls –

  • To begin with making Lauki ke kofta , we need to make the balls first. For this, take grated lauki / bottle gourd and sqeeze as much water as you can with your hands.
  • Take this squeezed lauki in a large bowl and combine all the ingredients (Except oil) listed under first category.
  • Give a nice mix. It should look more or less like a dough. Our mixture for kofta balls is ready.
  • Apply some oil on your palms and make lemon size balls of this kofta mixture. Meanwhile, heat sufficient oil in a wok.
  • Now, when our kofta balls are done and the oil is hot, we are ready to deep fry. Gently, slide 4-5 balls in the oil. Stir occasionally and fry till the balls turn golden brown and crisp from all sides. Carefully, take them out using a slotted spoon, drain excess oil and place over a plate with some kitchen napkins.

Our kofta balls are now ready to dive into the gravy.

For making Kofta gravy –

  • For making the gravy, heat oil in a deep pan or wok. Add cumin seeds and all the whole spices. Fry for a minute till the cumin seeds crackle n you get a nice aroma of spices.
  • Add chopped onion, turmeric powder and sauté till pink.
  • To this add chopped tomato, ginger garlic paste and all powdered spices. Saute on medium heat till tomatoes get mushy and the masala releases oil.
  • Now add water and salt. Increase the flame and let it come to boil.
  • Gently slide the kofta balls and simmer on low to medium heat for 5-7 minutes. Remove from heat and transfer to a serving bowl.

Lauki ke kofta is ready.
