This Maharashtrian style ‘Green Bean Pulao’ is a healthy and quick stir fry that can be made under 20 minutes. All you need is some cooked rice, French beans and some staple ingredients. It is mildly spiced, light on palette and can be paired with curd or relished as a one bowl meal. No doubts, this recipe makes a keeper for quick weekend dinners!

Recipe Ingredients

  • Green beans/French beans – 200 gms.
  • Cooked rice – 3 cups
  • Curry leaves – 8-12
  • Mustard seeds – 2 teaspoon
  • Asafetida (Hing) – A pinch
  • Dry redchilly – 2 (Broken)
  • Mustard seeds – 2 teaspoon
  • Red chilly powder – 1 teaspoon
  • Turmeric powder – 2 teaspoon
  • Dry mango powder (Amchur) – 1 teaspoon
  • Desiccated coconut – 1 tablespoon (Optional)
  • Salt – To taste
  • Refined oil – 2 tablespoon

To Garnish –

  • Freshly desiccated coconut
  • Fried curry leaves

How to make Maharashtrian Green Beans Pulao

  • To begin with making this Maharastrian style green beans pulao, we need to cut the beans in 1 inch pieces. Keep aside.
  • Heat oil in a pan. Add mustard seeds, curry leaves, turmeric powder, dry chilli, asafetida and cook for few seconds.
  • Add in the cut beans and give a nice mix.
  • Sprinkle some water and cover the pan. Cook on low flame for 5-7 minutes or till beans are cooked and tender. Do not over cook.
  • Now add in the cooked rice and rest of the ingredients. Mix and cook on medium flame for the next five minutes so that all the flavors can come together.
  • Remove from heat.
