This is one of the easiest ginger pickle recipe that you can make at home with handful of staple ingredients. It goes great with almost every Indian meal. Unlike other pickles i.e. mango or lemon, this ginger pickle does not takes much time to mature and is ready to eat in just one or two days.  Though you can make this pickle with the ordinary kind of ginger that is available round the year, but ‘Galangal’ or the ‘Raw ginger’ that comes in winters works best for this recipe.

Recipe Ingredients

  • Galangal (Raw ginger) – 500 gms.
  • White vinegar – 1 cup
  • Salt – 2 teaspoon or to taste
  • Juice of 10 lemons

How to make Instant Ginger Pickle

  • Scrap the skin of galangal and cut in juliennes.
  • Combine all the ingredients in a sterilized jar, close the lid and shake well.
  • Let it rest for a day.
  • As the juliennes of galangal will absorb lemon and vinegar, they would start turning pink.
  • The pickle is ready to eat when it gets a nice pink color that may probably take 1-2 days.
