Bajre Ki Roti or Bajra Roti hails from the very rich Rajasthani cuisine and have a very rustic flavor and texture. These Rotis are made with Pearl Millet Flour which is a Super Food due to high Fiber content and Nutrition.

Bajra Atta is not very easy to work with as it is Glutten Free and you need a bit of know how to roll these bajra rotis that are made 'Thicker' than the regular wheat rotis and have a peculiar color and density.

Bajra rotis are store house of nutrients, fiber and a regular intake of these rotis with curries, stir fried veggies, butter and dals keeps you warm in winters. Here we are providing you an easy recipe to make these rustic rotis at home with the regular gas top cooking method. These rotis are perfect for a Weight Loss Diet, just skip smearing with ghee or butter.

If somehow you can manage to cook these rotis on Clay Pan or Mitti Ka Tawa then you will get the exact texture and more or less the same taste as what you can get in a Rajasthani or Marwari village.

Actually this is a typical village recipe and you won't find much people knowing about Bajre Ka Atta in urban cities as most of them consume a staple diet of whole wheat rotis, paranthas, theplas or puris. Go to rural areas during winters in Rajasthan and you can see women rolling these thick rotis with palms and cooking on Chulha or Earthen Stove. Usually they serve bajra rotis with Palak kadhi, Mangodi Kadhi, Soya Saag Aloo or Palak Tamatar Sabzi. Homemade white butter and Jaggery go hand in hand with these meals.



The traditional way of serving Bajra Roti with Gud or Jaggery and White Butter is the ultimate. This is perhaps the best way to relish these rustic breads in winters. Well, if you dont get White butter, then do serve with Desi Ghee. However, if you're on a Weight Loss Diet then skip ghee or butter and relish with lightly tempered Navratan Dal, Chana Dal Lauki or Kadala Curry.

Bajra rotis are store house of fiber and energy. Include these breads in your regular winter diet with our menu. Serve them with Aloo Shimla Mirch Sabzi, Pattagobhi Aloo Sabzi, Gajar Matar Sabzi, Kadai Egg Curry, Aloo Matar sabzi or Kali Masoor ki Dal.

Recipe Ingredients

  • Bajra atta (Millet flour) - 2 cups + Extra for dusting
  • Green chilly (Finely chopped) - 1 teaspoon
  • Fresh coriander (Finely chopped) - 1 tablespoon
  • Salt - To taste
  • Carom seeds (Ajwain) - 1/2 teaspoon
  • Hot water - As required to make dough

How to make Bajre Ki Roti

Making Dough -

  1. To begin with making Bajre Ki Roti we need to knead the dough first. Combine all ingredients in a large mixing bowl and make a STIFF DOUGH with hot water.
  2. Cover with a lid or plate and keep to rest for 10 minutes.
  3. After resting, lighly knead the dough once again to make it soft and smooth and divide into small balls, about 2 inches in diameter.

Rolling & Cooking Bajre Ki Roti -

  1. For rolling these rotis, you would need 2 sheets of thick plastic. Place one sheet on your rolling board, take one dough ball, dust in flour and put on the sheet.
  2. Flatten it slightly with your palm and cover it with the second plastic sheet. With the help of rolling pin roll in a medium circle, about 4 inches in diameter.
  3. Remove the upper plastic sheet and gently lift the rolled out roti on your palm.
  4. Place it on a heated pan or tawa and cook on medium heat for about half a minute. Gently handle with a spatula and flip it.
  5. Cook till you notice small brown spots appear on the sides.
  6. Now lift the roti with your Tongs (Chimta) and put it directly over the flame. Cook on both sides on medium heat till you get lovely brown spots on either side.
  7. Bajra roti is now ready. Serve immediately and proceed with the remaining dough.
