‘Bhatura’ is one of the most popular deep fried fermented bread from Punjabi cuisine. It is commonly served with ‘Choley’(Chickpea curry) along with onion salad, mango pickle and yogurt. People also love to serve it with Dry Chana Masala

Well, this combination of ‘Chole-Bhature’ seems to be a match made in heaven as they beautifully compliment each other. Making the dough for bhaturas is a slight tricky job for the first time and that is why people often serve chole with puris instead of bhaturas. But, with our recipe and some practice you will be able to make golden puffed bhaturas pure restaurant style at home.



Serve these puffed bhturas with the classic Punjabi chole, home made mango pickle, dhaniya raita and relish pure Punjabi style meal with family and friends.

Recipe Ingredients

  • Refined flour (Maida) – 3 cups + extra for dusting
  • Sour yogurt – 1 cup
  • Sugar – 1 tsp
  • Baking powder – 1/2 tsp
  • Warm water – 1/2 cup or as required
  • Ghee/butter (Melted)  – 2 tsp
  • Oil – For deep frying

How to make Bhatura

  • Take a big bowl and mix together the first four ingredients.
  • Now, make a soft dough with warm water (Take water little bit at a time).
  • Cover the bowl with aluminum foil or cling wrap and keep it in a warm place to ferment overnight. Bhatura dough needs 8-10 hours for proper fermentation.
  • Next morning, remove the wrap. You will see that the dough has risen.
  • Rub ghee in this dough. If you find that the dough is too soft to handle, then add some refined flour and knead till smooth.
  • Now, our dough is ready to make bhaturas. Divide this dough into equal size balls (Size of a medium tomato). Also,take some refined flour in a plate for dusting.
  • Heat sufficient oil in a wok. Now take a ball, dust some flour and roll it out into a circle of about 5-6 inch diameter.
  • Put this into oil and deep fry the same way as you do for making ‘Puris’.
  • When it gets a nice golden color on both the sides, transfer it to another plate with some kitchen napkins to absorb the excess oil.
