Here we share with you one of the easiest and instant recipe of make these classic idlis with ‘Semolina’ (Rava) for a quick snack or breakfast. Like the traditional ‘Rice idlis’ these rawa idlis are equally soft, fluffy and can be savored with sambhar, chutney or rasam.

‘Idlis’ are staple diet in southern part of India. They are made with a mix of rice, lentils and require a long process of soaking, grinding and fermenting of batter. So, when you want to savor idlis at home, but missed to make any preparations in advance, then this rawa idli recipe is at rescue that allows you to make idlis instantly without much ado.



Serve these spongy rawa idlis with the classic vegetable sambhar or rasam.

For a quick fix snack or lunch box, you can also team up with coconut coriander chutney, peanut coriander chutney or simply top with desi ghee and spicy Andhra podi.

Instant Rawa Idli

Recipe Ingredients

  • Semolina (Rawa/sooji) – 2 cups
  • Buttermilk – 3 cups (Adjustable)
  • Salt – To taste
  • Fruit salt – 1 teaspoon

For tempering –

  • Oil – 2 tablespoon
  • Chana dal – 2 teaspoon
  • Urad dal – 2 teaspoon
  • Mustard seeds – 2 teaspoon
  • Asafetida – ¼ teaspoon
  • Curry leaves – 8-10
  • Cashew nuts (Broken) – 8-12

How to make Instant Rawa Idli

  • To begin with the recipe, we need to prepare a tempering for our idli batter.
  • For this heat oil in a pan and add mustard seeds, asafetida, curry leaves and lentils. When the lentils turn pink and give a nice aroma add the broken cashew nuts. Tempering is ready.
  • Now add semolina, salt and roast till pink while stirring continuously on low to medium heat. Turn off the heat and transfer to a bowl.
  • Mix in buttermilk and keep this batter to rest for 10 minutes. The consistency should be same as that of rice idly batter, so you can adjust the quantity of buttermilk accordingly.
  • While our batter is resting, heat about 4 cups of water in a steamer and grease the idli moulds with oil.
  • Add fruit salt to idli batter and give a gentle mix. At this point you will notice some bubbles appear in the batter. It means that the batter has become airy and this is very much important to make soft and fluffy idlis.
  • Now, when our rawa idli batter is ready, fill each cavity in the mould upto 3/4th level.
  • Now, carefully lift up the mould and place on the steamer. Cover with a lid and steam for 10-15 minutes on medium flame or till the idlis are cooked.
  • Turn off the heat and remove the moulds from the steamer. Let it cool for 5 minutes and remove the idlis with the help of a knife.

Steaming hot rawa idlis are ready.

Tip –

If you don’t have ‘Buttermilk’, then substitute it with 3/4 cup of sour curd and 2 cups of water. Whisk well and use as required
