Here we give you the recipe to make this ‘Palak Pakodi ki kadhi’ that is full of flavors and aroma. This is a keeper recipe that you would love to try out for your special weekend meals. Unlike Gujarati kadhi which is spicy and sweet, this palak pakode ki kadhi is robust in flavors and not very light due to fried spinach pakodi or fritters. Besides the distinct flavors of spinach, spices, yogurt, gram flour go hand in hand in this delectable kadhi preparation. Goes well with phulkas or roti, but tastes great with rice.

Recipe Ingredients

For Palak pakora  (Spinach fritters) –

  • Spinach (Chopped) – 3 cups
  • Gram flour – 1 cup
  • Red chilly powder – 1/2 teaspoon
  • Carom seeds – 1/2 teaspoon
  • Salt – 1 teaspoon or to taste
  • Water – As required to make batter
  • Oil – For deep frying

For ‘Kadhi’ (Gravy) –

  • Yogurt (Sour) – ½ cup
  • Gram flour – 1 tablespoon
  • Red Chilly powder – 1 teaspoon
  • Salt – To taste
  • Water – 1 ½ -2 cups
  • Oil – 2 tablespoon

Whole spices –

  • Cumin seeds – 1 teaspoon
  • Coriander seeds – 2 teaspoon
  • Fenugreek seeds – 1 teaspoon
  • Dry red chilly – 2

To garnish –

  • Freshly chopped coriander
  • Desi ghee

How to make Palak Pakoda Kadhi

  • To begin with making this ‘Palak ki kadhi’, first we need to make the pakoris/fritters…

To make ‘Palak pakoris/spinach fritters’-

  • Combine all the ingredients (Except oil) in a bowl and make a batter with water. It should have the consistency of a pancake like batter.
  • Now, heat oil in a kadhai/wok and drop spoonfuls of this spinach batter. Fry on medium heat till till golden and crisp.

‘Palak pakoris’ are ready. Transfer to a plate with some kitchen napkins and keep aside.

To make ‘Kadhi’ or ‘Gravy’ –

  • Mix together gram flour, yogurt, water, salt and to make a smooth batter.
  • In a deep pan/kadhai heat oil and add all the whole spices, asafetida, red chilly powder.
  • Now, add in the batter and bring to a boil. Season with salt and simmer on low flame for 5-7 minutes.
  • Add the pakoris/fritters and simmer for another 2 minutes. Remove from heat. 

Our Palak wali kadhi is now ready for serving.

Tips –

  • While making ‘Kadhi’ or gravy, use a LARGE wok. Kadhi froths while cooking and can spill if you use a smaller one.
  • Deep fry the pakoris/fritters on low to medium heat. If you fry on high heat, then they may quickly get golden from outside but remain undercooked/raw inside.
