Mooli Ki Sabzi is a simple and lip smacking curry recipe made with seasonal Radish along with it’s greens. Mooli Ki Sabzi basically hails from the cuisine of UP, Bihar and Jharkhand where it is called Mooli Tarkari.

This is a quick curry made in pressure cooker and tastes absolute delish with rustic Indian breads. This is a No Onion Garlic Recipe and there is absolutely nothing to grind or fry, hence the dish comes together in no time and is a perfect one to make a quick meal. The dominant flavors of Radish compliment beautifully with Hing (Asafoetida) and Ajwain (Carom seeds), thus making it a delicious and wholesome meal during winters.

One thing more, usually we see people cooking Radish and discarding the ‘Greens’. But did you know that Green leafy vegetables like spinach, methi (fenugreek), radish leaves and lettuce are extremely low in fat, calories and high in dietary fiber. They also contain folic acid, magnesium, calcium and potassium. These minerals are beneficial for the optimum functioning of the heart. Hence in this recipe of Mooli Ki Sabzi, we have used this whole vegetable to retain maximum nutrition. So do not throw away these Mooli Ke Patte, they are good for you!

Recipe Ingredients

  • Radish with greens - 1 large or 2 medium
  • Asafoetida (Hing) - A pinch or two
  • Carom seeds (Ajwain) - 1/2 teaspoon
  • Cumin seeds (Jeera) - 1/2 teaspoon
  • Dry red chilli (Sookhi lal mirch) - 1 broken
  • Garam masala - 1 teaspoon
  • Red chilli powder - 1/2 teaspoon
  • Ginger (Chopped) - 1 teaspoon
  • Water - 3/4 cup (Adjustable)
  • Salt - To taste
  • Oil - 1/2 tablespoon

How to make Mooli Ki Sabzi

To begin with making this Mooli Ki Sabzi we need to wash the radish (mooli) and greens to remove away the dirt.

  1. Peel radish and slice in circular pieces. Also chop the greens, though you might remove broad stalks. Keep aside.
  2. Now heat oil in a pressure cooker and add in cumin seeds, carom seeds, dry red chilli, asafoetida, chopped ginger and fry for few seconds on low flame.
  3. Add in the radish slices, chopped greens, garam masala, red chilli powder alongwith 3/4 cup of water. You can adjust the amount of water to your preferance.
  4. Mix with a spatula to combine things well and season with salt.
  5. Close the lid and pressure cook for a whistle. Remove from heat and allow the steam to escape on its own.
