These lovely golden crusted ‘Buttermilk muffins’ are a delight to relish with homemade vanilla butter cream icing and make a significant party dessert. The texture is very light, soft, spongy and the slight acidity of buttermilk makes an excellent tenderizer for quick muffins and breads. This is a great recipe that can be adapted to almost anything. You can add fruits of choice like blueberry, orange, apple and take it to the next level.

Recipe Ingredients

  • Refined flour – 2 ½ cups
  • Unsalted butter (At room temperature) – 50 gms.
  • Buttermilk – ¾ cup
  • Eggs (Lightly beaten) – 2
  • Baking powder – 1 ½  teaspoon
  • Baking soda – ½ teaspoon
  • Salt – A pinch or two
  • Castor sugar – ¾ cup
  • Vanilla essence – 1 teaspoon (Optional)

To serve –

  • Vanilla butter cream icing

How to make Buttermilk Muffins With Vanilla Butter Cream Icing

  • To begin with making these drooling ‘Buttermilk muffins’, we need to sift together flour, baking powder, soda, salt in a bowl.
  • In a separate bowl whisk together the butter, eggs, buttermilk, vanilla essence and castor sugar. Keep whisking till you get a pale yellow homogenous mixture.
  • Now gently fold in the dry ingredients into this buttermilk mixture. Fold until combined. Remember, this mixture won’t be smooth and silky.
  • Our batter for buttermilk muffins is now ready and we need to prepare our moulds.
  • For this, grease each muffin mould with butter and dust some flour. If using silicon muffin moulds, just omit this step.
  • Scoop the batter into muffin moulds filling each one upto 3/4 th level.
  • Bake until golden in a pre heated oven at 180 degrees for 18-20 minutes or till a toothpick comes out clean.
  • Remove from the oven, cool at wire rack and serve. Tastes best with homemade vanilla butter cream icing.
