Believe me, it is one of those easiest breakfast recipes that you can rely upon during rush hours, when you missed to make preparations before hand. No boiled vegetables, batter, soaking, grinding, ABSOLUTELY NOTHING OF THESE IS REQUIRED! You just need a bowl of Hung Curd, few mixed veggies that are usually eaten 'Raw' like carrot, onion, capsicum, cabbage or more and few slices of Bread that is a staple in our homes. Add in some more flavors by mixing some tomato ketchup or any other sauce of choice in the filling itself. Now, if you have time then grill this curd sandwich on pan, otherwise it tastes delicious and creamy raw as well.

Recipe Ingredients

  • Bread - 2 slices
  • Curd (Hung Curd)- 1 cup approx
  • Cabbage (Roughly chopped) - 2 tablespoon
  • Capsicum (Chopped) - 1 tablespoon
  • Tomato (Chopped) - 2 tablespoon
  • Onion (Chopped) - 1 tablespoon
  • Green chilly (Chopped) - 1 teaspoon or optional
  • Fresh coriander (Chopped) - A handful
  • Salt - To taste
  • Black pepper powder - A pinch or two
  • Oil or butter - As required to grill

How to make Curd Sandwich

  • Now you would see as to why we have emphasized so much over the ‘Ease’ of this vegetable curd sandwich recipe.
  • All you need is combine everything (Except ‘Bread’ & ‘Oil’) in a bowl and give a nice mix. Though you might need to check for ‘Salt’.
  • Now put a generous layer of this filling over a bread slice and cover with the other. Sandwich is done and you can have it as it is.
  • However, if you prefer ‘Grilling’, then you can either grill on a pan or tawa and can also opt for an ‘Electronic Sandwich Maker’. It tastes yummy both ways.
  • For ‘Grilling’ on pan, just heat the pan and spread some oil or butter, whatever you like and put the sandwich.
  • Smear the top as with oil or butter and when the lower slice gets golden brown and crisp, carefully flip the sandwich with spatula to grill on the other side as well. Remove from heat, cut diagonally or straight and serve immediately.
  • Wasn’t that easy & simple???
