Bhindi masala recipe is a classic combination of bhindi, tomatoes, yogurt and perked up with an assortment of freshly pounded pickling spices. Hence, it is robust with flavors and aroma. Recipe Ingredients

  • Bhindi (okra / Lady finger) – 250 gms.
  • Onion (Sliced) – 1 medium
  • Garlic (Minced) – 3-4 pods
  • Sour curd – 1 tablespoon
  • Turmeric powder – 1/2 teaspoon
  • Red chilly powder – 1 teaspoon
  • Dry mango powder – 1 teaspoon
  • Salt – To taste
  • Oil – 2 tablespoon

Pickle spices (To be ground) –

  • Mustard seeds – 1/2 teaspoon
  • Coriander seeds – 1 teaspoon
  • Cumin seeds – 1/2 teaspoon
  • Fenugreek seeds – 1/4 teaspoon
  • Onion seeds (Kalonji) – 1/4 teaspoon
  • Fennel seeds – 1/2 teaspoon

Whole spices –

  • Dry red chilly (Broken) – 2
  • Cumin seeds – 1 teaspoon
  • Onion seeds – 1/4 teaspoon
  • Fenugreek seeds – 1/4 teaspoon

How to make Bhindi Masala | Achari Bhindi

  • To begin with the bhindi masala recipe , first we need to wash bhindi. Pat dry with a kitchen towel and spread it on a sheet under fan for 5-7 minutes to ensure that all the moisture is removed.
  • Cut into 1 inch pieces and keep aside. You can also keep it whole and just remove the crown.
  • In a pan, dry roast all the pickle spices on low flame till you get a nice aroma. Grind to a fine or slightly coarse powder. Our Achari masala is now ready to flavor our dish.
  • Take sour curd in a small bowl and mix in the achari masala. Keep aside.
  • Now heat oil in a pan, add all the whole spices and allow them to crackle.
  • Next, add in the sliced onions, minced garlic and sauté till pink.
  • Add in the okra and cook on medium flame for 8-10 minutes while tossing occasionally.
  • Season with salt, add in the curd mixture and continue cooking for a minute while stirring continuously.
  • Remove from heat.
