Kaju Matar Masala from the Muglai cuisine is an excellent gravy based recipe cooked with green peas in a rich onion, tomato and cashew nut based gravy.

‘Cashew Nuts’ come out as the real hero since they are used in both whole and pureed form, no points for guessing that it tastes heavenly makeing it a complete extravagent curry to be served in Festivities or Parties.

Well, in most of the Muglai recipes you would notice that flavors like Kewra and Gulab Jal are generously used in both sweet and savory dishes. But frankly speaking, I do not prefer those since they are very intense and over power the real taste of all veggies, masalas and whatever you put in your dish. So using them is truely up to one’s choice. However, if prefer you can add little amount of Fresh Cream at the end of cooking that would make your gravy more velvety and rich.

We do make Aloo Matar Sabzi Gravy and Aloo Matar Without Onion Garlic for our regular meals, but this Kaju Matar Masala is sure going to make you wanting for more and more. You can add more dry fruits if prefer and trust me, it is a delight to have this exotic curry with Puris, Kachoris or Pulao. But why to restrict yourself from relishing this trasure trove only on Festivities or Parties? Try making it for your special Weekend Meals and have fun with family!

Recipe Ingredients

  • Green peas (Boiled) - 200 gms.
  • Cashew nuts - 1/2 cup 

For the ‘Gravy’ -

  • Onion - 1 large
  • Tomato - 1 medium
  • Ginger garlic paste - 1 teaspoon
  • Cashew nuts - 1/4 cup
  • Red chilli powder - 1 teaspoon
  • Turmeric powder - 1 teaspoon
  • Garam masala - 2 teaspoon
  • Green chilli (slit) - 2
  • Salt - to taste
  • Water - 1 cup or to preferance
  • Ghee - 1-2 tablespoon 

Whole Spices -

  • Cumin seeds (Jeera) - 1 teaspoon
  • Cardamom (Choti elaichi) - 2
  • Cloves (Laung) - 4
  • Bay leaf (Tej patta) - 2
  • Cinnamon (Dalchini) - 1 inch stick

To Garnish -

  • Fresh cream - 1 tablespoon (Optional)
  • Freshly chopped coriander
  • Fried onion

How to make Kaju Matar Masala

To begin with making this Muglai Kaju Matar Masala we need to soak 1/4 cup of cashew nuts in hot water for about an hour. Remove the excess water and blend in mixer to make a smooth silky paste. Keep aside as we would be needing it later in gravy.

  1. Also grind onion and tomatoes separately to make puree and keep aside.
  2. Now heat ghee in a pan and fry the remaining cashew nuts till golden. Take out in a plate and in the same ghee add all the whole spices to crackle.
  3. Add in the onion paste, green chilli, turmeric powder and cook till it oozes ghee.
  4. Now add in tomato paste, ginger garlic paste and saute till it comes together and separates from the ghee.
  5. At this stage you need to add cashew nut puree that we prepared at the first step. Stir well and cook for a minute.
  6. Gently add in water for the gravy and stir. Season with salt, garam masala, red chilli powder and allow it to boil on high heat.
  7. After it comes to a boil lower the heat and mix in gently boiled green peas and fried cashews.
  8. Simmer for 5 minutes and remove from heat.

Kaju Matar Masala is ready. Top with fresh cream if you want and garnish with fried onion or chopped coriander. Serve!
