Recipe Ingredients

  • Fresh fenugreek leaves / Methi saag (Removed from stalk) - 2 cups tightly packed
  • Gramflour/besan - 1 tablespoon
  • Curd (Preferably sour) - 1 cup or 2 cups buttermilk
  • Green chilli (Slit) - 2
  • Ginger (Chopped) - 2 teaspoon
  • Garlic (Chopped) - 1 teaspoon
  • Turmeric powder (Haldi) - 1 teaspoon
  • Red chilli powder - 1 teaspoon
  • Salt - To taste
  • Oil - 1 tablespoon 

For Tempering -

  • Ghee - 1 tablespoon
  • Cumin seeds - 1 teaspoon
  • Dry red chilli - 2 broken

How to make Methi Kadhi

  1. To make Methi Kadhi wash and finely chop methi leaves. Keep aside.
  2. Heat oil in a large wok and add cumin seeds, green chilli, ginger, garlic and fry till golden brown.
  3. Add in methi leaves and cook for 2-3 minutes just till soft. Meanwhile in a bowl make a batter with curd, turmeric powder, red chilli powder and 2 cups of water. Take care that there should not be any lumps. If
  4. using Buttermilk, then no need to add water.
  5. Add this batter into the wok and stir. Let it cook on high flame till it comes to a boil.
  6. After a boil you would notice that it has gained thickness. Season with salt and cook on medium heat for 2-3 minutes more. Remove from heat.
  7. Methi kadhi is ready, but to add in more flavors we need to give it a final tempering.
  8. For this heat ghee in a pan and add in cumin seeds, dry red chilli and as they begin to ctrakle switch off the flame and carefully pour this tempering over the cooked kadhi.
  9. Methi Kadhi is now ready to serve!
